    <description>&lt;P&gt;I just found this recipe hidden in with some others.  I don't think that I have posted this before now.  It is a "tried and true" recipe and is easily and quickly made.&lt;/P&gt; &lt;P&gt;Fiesta Shrimp on Rice&lt;/P&gt; &lt;P&gt;2 - 5 oz. cans shrimp or 1-1/2 cups cooked and cleaned shrimp&lt;BR /&gt; 1 tsp. grated onion&lt;BR /&gt; 4 tbsp. shortening&lt;BR /&gt;  10.5 oz. can condensed chicken consomme' (1-1/4cups)&lt;BR /&gt; 1/8 tsp. pepper&lt;BR /&gt; 4 tsp. cornstarch&lt;BR /&gt; 1/4 cup water&lt;BR /&gt; 15 oz. can cut green beans (2 cups)&lt;BR /&gt; 4-1/2 cups hot cooked rice&lt;/P&gt; &lt;P&gt;Saute shrimp and onion in shortening over medium heat until shrimp  is browned.  Add consomme' and pepper and bring to a boil.  Combine cornstarch and cold water and add to shrimp mixture.  Simmer over low heat until slightly thickened. Add beans and heat through. Serve over hot cooked rice.  (May add chopped pimento to rice for color contrast.)Serves 8.&lt;BR /&gt; Note: 1-14 cups tomato juice may be substituted for the consomme'.&lt;BR /&gt; Posted by sue-p    1/9/11&lt;/P&gt;</description>
