Let it soak for about five minutes while you prepare the dry ingredients.&lt;/P&gt; &lt;P&gt;In a separate bowl, mix together the dry ingredients, except for the raisins, which will be blended in last.&lt;/P&gt; &lt;P&gt;Mix the wet and dry ingredients together a little at a time, being careful not to over stir, as this makes muffins tough.&lt;/P&gt; &lt;P&gt;Fold in the raisins.&lt;/P&gt; &lt;P&gt;Fill six jumbo sized, greased muffin pans and bake about 25-30 minutes at 400 degrees until muffins are golden brown and crusty on top.&lt;/P&gt; &lt;P&gt;Let cool on a wire rack.&lt;/P&gt; &lt;P&gt;&lt;STRONG&gt;Each muffin is approximately 300 calories.&lt;/STRONG&gt;&lt;/P&gt; &lt;P&gt;*If you are interested, you can make a vegan version of this using soy or almond milk and egg substitute.
