      <title>Hummingbird Cake</title>

      <description>&lt;P class="MsoPlainText"&gt;&lt;STRONG&gt;&lt;SPAN style="text-decoration: underline;"&gt;Hummingbird Cake&lt;/SPAN&gt;&lt;/STRONG&gt;&lt;/P&gt; &lt;P class="MsoPlainText"&gt; &lt;/P&gt; &lt;P class="MsoPlainText"&gt;Makes 12-16 servings, Recipe comes from Silver Dollar City, Branson, Mo.&lt;/P&gt; &lt;P class="MsoPlainText"&gt; &lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 1/2 cups sugar                               &lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 1/2 cups flour&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 t. baking soda&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1/4 t. salt&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1/4 t. ground cinnamon&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 8 oz. can crushed pineapple in juice, drained&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1/2 cup cooking oil&lt;/P&gt; &lt;P class="MsoPlainText"&gt;4 eggs, lightly beaten&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 t. vanilla&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 cup chopped bananas&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 cup chunky style applesauce&lt;/P&gt; &lt;P class="MsoPlainText"&gt;2/3 cup chopped walnuts, toasted&lt;/P&gt; &lt;P class="MsoPlainText"&gt;Cream Cheese Frosting (recipe follows)&lt;/P&gt; &lt;P class="MsoPlainText"&gt;1 1/2 cups chopped pecans, toasted&lt;/P&gt; &lt;P class="MsoPlainText"&gt; &lt;/P&gt; &lt;P class="MsoPlainText"&gt; &lt;/P&gt; &lt;P class="MsoPlainText"&gt;Grease and lightly flour two 9 x 1 1/2" round cake pans; set aside.&lt;/P&gt; &lt;P class="MsoPlainText"&gt;In a large mixing bowl, combine sugar, flour, baking soda, salt and cinnamon. Add pineapple, oil, eggs and vanilla. Beat with an electric mixer till combined, scraping bowl occasionally. Stir in bananas, applesauce and walnuts. Divide batter between prepared pans.&lt;/P&gt; &lt;P class="MsoPlainText"&gt;Bake in a 350* oven 35 minutes or until tip springs back when lightly touched. Cool on wire racks for 10 minutes. Remove from pans; cool thoroughly.&lt;/P&gt; &lt;P class="MsoPlainText"&gt;Frost cake. Lightly press pecans into sides of cake. Sprinkle top with additional finely chopped pecans.&lt;/P&gt; &lt;P class="MsoPlainText"&gt; &lt;/P&gt; &lt;P class="MsoPlainText"&gt;Cream Cheese Frosting&lt;/P&gt; &lt;P class="MsoPlainText"&gt;In a large bowl, beat 1 8 oz. package cream cheese (softened), 1/2 cup butter (softened) and 1 t. vanilla until light and fluffy. Gradually add approx. 2 cups powdered sugar, beating until smooth.&lt;/P&gt; &lt;P class="MsoNormal"&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;This is another old recipe I found while going through some recipes I have made, this one is very tasty.       <description>&lt;P&gt;They have a recipe and a picture for this on the King Arthur Flour web-site. I was never quite sure what it looked like! You can get a lot of great recipes off their site. Not to mention that their prodcuts are fantastic as well.&lt;/P&gt;</description>

      <description>&lt;P&gt;I just made this cake using the Southern Living recipe. Wow! what a cake! What I found most interesting was baking the bananas before peeling them. You get a ""deeper"" banana flavor. My friend also used the Southern Living recipe and loved it too. This cake serves 16. I froze about 1/4 of mine and it worked well.&lt;/P&gt;</description>

      <description>&lt;P&gt;I tried to post a picture with the recipe, but for some strange unknown reason, my computer would not let me. I make a 2 layer one (haven't made one in years but still remember how good it was), but it can be made into 3-4 layers or even in a bundt pan as well. Not sure on the bake time for a bundt pan, but I'm sure you could google for that info.&lt;/P&gt;</description>

In a&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;large bowl, combine flour, soda, salt,&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;cinnamon, and sugar. Add eggs and oil,&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;stirring until flour mixture is moistened.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Do not beat. Stir in remaining&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;ingredients. Pour batter into 3 greased&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;and floured 8-inch round pans. Bake for&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;23-28 minutes or until a toothpick&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;inserted in the center comes out clean.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Cool in pans for 10 minutes. Flour&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;2 c. sugar....note, may reduce by and use applesauce for part of this&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1 tsp soda&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1 tsp salt&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1 cup pecans....note, I omit these&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1 1/2 cups oil...can cut down to 1 or 1 1/4 cups of oil&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;3 eggs beaten&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1 8 oz. can of crushed pineapple, not drained&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;2 cups banana....about 3, chopped into small pieces&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1 1/2 tsp vanilla....I also like to add nut extract and banana extract&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Mix dry ingredients together...&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;in a separate bowl combine wet ingredients&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Make a well in middle of dry ingredients....add the wet and stir just until combined.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Bake in tube pan for 1 hour and 20 minutes.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Note. I use 12 inch bundt pan or 2 9 x 5 loaf pans.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Note. Baking time can vary...it can get very brown and may have to cover with foil after one hour to prevent over browning.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;Time also varies from 60 to 90 minutes. Test the usual way...if knife inserted in center comes up clean.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;I don't frost or add toppings, but I have heard of some terrific ideas.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;1. Cream Cheese Frosting...8 oz. of cream cheese, 1/2 cup of butter, 4 cups of powdered sugar, 2 tsp vanilla.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;2. Coconut Streusel topping...1/4 cup of butter, flour, sugar, coconut...equal parts...mix until crumbly.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;3. Coconut Glaze...2 Tbs. butter, 1/3 cup sugar, 1/3 cup coconut, 1/3 cup milk.....heat and allow to cool slightly before applying to cake.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;4. Pineapple Glaze...like above but take out the coconut and milk and use pineapple juice&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;5. Dust with powdered sugar or leave plain.&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt;&lt;SPAN style="font-size: 12pt;"&gt;last note... I believe that the Hummingbird cake was traditionally baked in three cake pans and layered with the cream cheese frosting and covered with the cream cheese frosting and chopped pecans. I have seen it in photos that way, as well as a simple sheet cake.&lt;/SPAN&gt;&lt;/P&gt;</description>

      <description>I made your cake today snickster and it is DELCIOUS! Only changes I made were to bake it on a sheet pan and to add 1 tsp of apple pie spice. Then I made my own cream cheese frosting from a carrot cake recipe because it is a little lighter. It has 1 pack of cream cheese, 4 Tbs butter, zest and juice of a lemon, tsp of vanilla and one cup of powdered sugar. It really is a wonderful recipe, thanks for posting.
