    <description>&lt;P&gt;I found this recipe on a Blog the other day. You can bet these will be in my house this weekend though.&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;Mini Pumpkin Cheesecakes&lt;/P&gt; &lt;P&gt;2  8oz. blocks of Cream Cheese, softened&lt;/P&gt; &lt;P&gt;3/4 C. Sugar&lt;/P&gt; &lt;P&gt;2 Eggs (@ room temp.)&lt;/P&gt; &lt;P&gt;1 tsp. Vanilla&lt;/P&gt; &lt;P&gt;1 tsp. Pumpkin Pie Spice&lt;/P&gt; &lt;P&gt;1 C. Pumpkin (not Pumpkin Pie Filling)&lt;/P&gt; &lt;P&gt;24 Ginger Snap Cookies&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;Pre-heat oven to 375. Line cup cake/muffin pans with cupcake liner cups.&lt;/P&gt; &lt;P&gt;In a large bowl beat cream cheese until smooth. Add sugar, eggs, vanilla, and pumpkin pie spice. Blend until well combined. Add pumpkin and mix well.&lt;/P&gt; &lt;P&gt;Fill each liner 2/3 full of cheesecake mixture.&lt;/P&gt; &lt;P&gt;Bake 10-12 minutes&lt;/P&gt; &lt;P&gt;Cool completely&lt;/P&gt; &lt;P&gt;Store in fridge.&lt;/P&gt; &lt;P&gt; &lt;/P&gt;</description>
