      <title>Pina Colada Cream Cake</title>

      <description>&lt;P&gt;I had Christmas dinner at a friend's home, and felt like experimenting for dessert.  Came up with the following, which was a huge hit:&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;PINA COLADA CREAM CAKE&lt;/P&gt; &lt;P&gt;1 box Duncan Hines pineapple cake, plus ingredients to prepare as indicated on box (you can also use a coconut cake mix)&lt;/P&gt; &lt;P&gt;1/2 cup rum (I used pineapple-coconut flavored rum)&lt;/P&gt; &lt;P&gt;1 20 oz. can crushed pineapple, well-drained (save juice for the cake)&lt;/P&gt; &lt;P&gt;1 box instant coconut cream pudding mix (use vanilla if you can't find coconut)&lt;/P&gt; &lt;P&gt;1 1/2 cups milk &lt;/P&gt; &lt;P&gt;1 8 oz. pkg. cream cheese, softened&lt;/P&gt; &lt;P&gt;1 tsp. rum extract&lt;/P&gt; &lt;P&gt;2 cups whipped cream (or, if you must, Cool Whip)&lt;/P&gt; &lt;P&gt;Flaked coconut&lt;/P&gt; &lt;P&gt;Prepare the cake in a 9 X 13 pan according to the instructions on the box EXCEPT replace the water with the juice from the drained pineapple.  (Add more water if you need to to get the amount called for.)  &lt;/P&gt; &lt;P&gt;Cool completely, then make holes all over the top of the cake, not quite to the bottom.  (I used a cupcake corer, but you could use the handle of a wooden spoon.)  &lt;/P&gt; &lt;P&gt;Use a brush to spread the rum all over the top of the cake; allow it to soak in.&lt;/P&gt; &lt;P&gt;Spread the crushed pineapple evenly over the top of the cake, pushing some into the holes on the cake.&lt;/P&gt; &lt;P&gt;In a medium bowl, mix the pudding mix, milk, cream cheese, and rum extract until well-blended, then spread it over the top of the cake.  Refrigerate for an hour or two to set. &lt;/P&gt; &lt;P&gt;Spread whipped cream over the top of the cake, and sprinkle with flaked coconut.&lt;/P&gt; &lt;P&gt;Serve.  &lt;/P&gt; &lt;P&gt; &lt;/P&gt;</description>

      <description>&lt;P&gt;Our families favorite cake is called Million Dollar Cake, we have been making them since 1980.  However we make yellow pudding cake, or coconut if you can find it.  Bake in 9x13 as directed.You can use some of the pineapple juice in place of water for the cake!  We mixed the milk,lg pkg vanilla pudding and softened cream cheese together.  Do not use skim or non fat milk!  Make the whipped cream ahead, or have cool whipp, thawed.  Drain large can crushed pineapple, drain well!!&lt;/P&gt; &lt;P&gt;assemble&lt;/P&gt; &lt;P&gt;leave cake in pan, or turn onto covered cardboard or large cake plate.  Pour pudding mixture on cake, and smooth over entire cake surface. Sprinkle drained pineapple over entire pudding surface,  Frost with whipped cream, or cool whip!  Sprinkle top with toasted , slivered almonds (toasted chopped walnuts are good too) and toasted coconut!&lt;/P&gt; &lt;P&gt;This cake, like the Pina colada is the best cake ever.  It is moist, flavorful, and refreshing with the pineapple and whipped cream. It is just different enough to make people stop and notice.  Everyone loves it.  IMO, it is best cold from the fridge.&lt;/P&gt; &lt;P&gt;What i love is you can change it around and it gets even better.  The Pina Colada sounds good .  We don't use alcohol, but we can use rum extract and spread cake with brush with a simple syrup with rum flavoring.  I love the idea of coconut cake.  I think sliced bananas would be good with the pineapple too.&lt;/P&gt; &lt;P&gt;We have also made this cake with banana cake, banana pudding, pineapple and sliced banana over pudding/cream cheese mixture&lt;/P&gt;</description>
