I was recently diagnosed with diabetes. I'm not having too much trouble not eating candy, cakes, cookies, etc. But, on those special occasions when I would ordinarily bake for my family, I do look forward to indulging in some homemade treats. It's sad thinking I'll never be able to eat them again.

I was wondering if Splenda can be substituted for the granulated sugar in those recipes?

Also, is there something that can be substituted for the brown sugar?

Thank you

Yes, I have some books on using it. Marlene Koch has books out on using it. George S does too. I can never remember his last name. He has recipes in Food Network (he's someone along with his family that lost a lot of weight going low carb.) Marlene Koch has 3 books I know of. Check amazon.com and read. Go to Splenda web site and read there for answers too.

There's so much out in the stores now for you to choose from. My dad was Diabetic, so I've seen a lot of stuff I had to use for him.

Good luck, it can be done, and tastefully.

Calista, Prevention Magazine has recipe magazines for diabetics and they test their recipes with real and artificial sweeteners. For some, Splenda actually raised blood sugar: be sure to check yours and learn how you respond. It may or may not affect you. That being said, most of their desserts are made with real sugar and fruit, and it's a matter of portion control....and by the way, they look delicious. Poodlepet

Splenda makes a brown sugar substitute but it is not a one for one substitution.

I have tried using regular Splenda to bake a small cheesecake for my diabetic mother. A lot of the flavor in sweets comes from sugar. Without sugar and using only Splenda, there was no real taste even with vanilla. Also, not using sugar affects the volume of the dessert that you are making.

I worked with the Splenda people. In the end, I had to add 3X's the amount of vanilla in the cheesecake to give it some flavor. Also, I had to add some flour to increase the volume of the cheesecake.

The Splenda website has recipes for desserts such as chocolate chip cookies.

Look in to WheyLow their "sugar" is very good and according to their website

Whey Low is extremely easy to use since it is an exact One-for-One Replacement for table sugar in Volume, Weight and Sweetness. So, if a recipe calls for one cup of sugar, just use one cup of Whey Low.

I'd cook with real sugar for the others and use diabetic choices for myself.

Those packets of powdery sugar don't really work in recipes that call for amounts of sugar wouldn't hold up. Just like some people, usually the young, think they can make gravy with skim milk, soy milk all that 'stuff' then they wonder why it doesn't thicken and taste like slop.

I want to scream let yourself have some joy once or twice a yr and cook like our ancestors did and some of them lived to be in their 90's.

Thank you so much ladies, I really appreciate all your suggestions.

qualitygal......I've been wanting a good sugar free cookbook, and I knew QVC had had one in the past, but I couldn't remember the ladies name. Thank you for posting it.

I am still oxox......Thank you for posting George Stella's name. I remember seeing him on his own show years ago. Thanks also for telling me about the WheyLow sugar substitute, I will check in to it.

FastDogWalker2......Thank you, I need all the luck I can get.

Poodlepet......Wow! I wasn't aware that Splenda could raise the blood sugar in some people, that's very good information to have. Thank you for letting me know. This is very new to me, and I have a lot to learn. Thank you for the magazine recommendations, too.

meezerpleezer......Thank you for letting me know about brown sugar Splenda. After all your trial and error, did you finally end up with a good tasting cheesecake? I love the Juniors Cheesecake Cookbook recipes, I'd love to be able to convert their recipes to sugar free, or maybe low sugar.

Mrs. Grace......I'm happy to hear you've been so successful in converting your recipes, care to share any?

gonnab......I have not heard about Truvia, but I will certainly check in to it.

I've also been doing it for many years. I just made pumpkin pies yesterday with Splenda (same amount as if I were using granulated sugar). You'd never know the difference, and I'm pretty picky.

Splenda used to have a brown sugar one but, IIRC, it did have some sugar in it. Still better than using ALL sugar, though, eh? I haven't looked lately, so I don't know if they still make that one.

CaliKat--I saw the Splenda brown sugar this past week at the store. I also saw store labeled versions as well. It is 1/2 sugar and 1/2 sugar substitute so it isn't a one for one substitution. I think I recall that you use 1/2 of whatever the recipe calls for. Read the bag before you buy it.

The cheesecake recipe was from Kraft. Kraft absolutely refused to help me modify their recipe with Splenda. The Splenda people worked with me and offered suggestions. You may want to contact them. That said, the cheesecake was pretty good but not quite as good as the one with sugar. However, my mother's choices were to either not have anything for dessert or enjoy the sugar substitute version. She was very happy with it. Just remember that you will need to add some extra extract to make up for the difference between sugar and Splenda.

The Splenda people have numerous recipes, some modified for just sugar substitution, others modified to use egg substitutes as well.

Splenda is sucralose and sucralose can be very bad for you. I'd prefer Stevia powder for baking. If that wasn't available, then regular sugar and either have a small serving or just go without.

Indulging on those special occasions a few times a year isn't going to hurt you.
I'm sincerely pleased for you that you can do that successfully, but that's a generalization that really doesn't work well for some of us. If I do that, it DOES hurt me.

Last year I was asked to bake the diabetic cookies for our church cookie sale. I had to experiment some to get any flavor at all in the cookies; I used Splenda and thought the cookies were awful!....I ended up using much more vanilla, lemon, and almond flavoring than called for, plus about 3 times as much cinnamon, apple pie spice, etc. I also used orange peel and lemon peel in the cookies. I added raisins also, just to try to get some flavor. I put a dried cranberry or a pecan on top of some to give a festive look.

To my surprise, people loved them! This year I am trying Truvia, because I find it has a slightly fruity taste.

My biggest challenge was learning that Splenda gives the cookies a much different texture than a regular cookie...had to play with the baking times.

Good Luck! And remember, keep experimenting until you find something you like.
