      <title>Prune Cake Recipe Needed</title>

      <description>My late mama used to make a Prune Cake every Christmas. It was very unhealthy so I guess that's why we only had it once a year. I think I remember her saying it had 2 cups of oil in it and a ton of sugar. And the icing was not the typical whipped icing. It was white but not fluffy. She would pour it over the cake. And when the frosting "set" it was be kind of hard and breakable. I'm not sure if this makes any sense but I would so appreciate your help. Thanks!</description>

Good luck.&lt;/P&gt; &lt;P&gt;&lt;SPAN style="text-decoration: underline;"&gt;&lt;STRONG&gt;Jack Nicklaus' Favorite Prune Cake with Sauce&lt;/STRONG&gt;&lt;/SPAN&gt;&lt;BR /&gt; &lt;BR /&gt; 2 c flour&lt;BR /&gt; 1 1/2 c sugar&lt;BR /&gt; 1 t baking soda&lt;BR /&gt; 1 t salt&lt;BR /&gt; 1 t cinnamon&lt;BR /&gt; 1 t nutmeg&lt;BR /&gt; 1 c vegetable oil&lt;BR /&gt; 1/2 c buttermilk&lt;BR /&gt; 3 eggs&lt;BR /&gt; 1 c stewed prunes&lt;BR /&gt; 1 t vanilla&lt;BR /&gt; &lt;BR /&gt; Sauce:&lt;BR /&gt; 1 c sugar&lt;BR /&gt; 1/2 c butter&lt;BR /&gt; 1/2 c buttermilk&lt;BR /&gt; 1 t soda&lt;BR /&gt; &lt;BR /&gt; Sift together four, sugar, soda, salt, cinnamon, and nutmeg.  Add oil, buttermilk and eggs; mix well.  Stir in prunes, nuts and vanilla.  Pour into a greased and floured 9 x 13-inch baking pan.  Bake in a 350 deg. preheated oven 35-40 min. or until done.  Test with a toothpick.&lt;BR /&gt; &lt;BR /&gt; When cake is done, make the sauce.  Combine all ingredients in a saucepan and bring to a boil, stirring.  Pour sauce over each service of cake.&lt;BR /&gt; &lt;BR /&gt; Idea: double this recipe and bake half the batter in a loaf pan and when cooled, slice into four or five layers and then spread with a good marmalade or a good cherry preserve then restack, let set and slice and serve with the sauce or a good stiff whipped cream. Bring to a boil and cook until soft and mashable, about eight minutes. Remove from heat, drain water, and mash on a plate. Set aside.&lt;/P&gt; &lt;P&gt;Mix together oil, sugar, and eggs. In a separate bowl, sift together dry ingredients. Combine wet and dry ingredients, add buttermilk and vanilla and stir gently until just combined. Throw in the mashed prunes and stir gently to combine. DO NOT OVERMIX!&lt;/P&gt; &lt;P&gt;Pour batter into buttered baking dish (9 x 13 or so) and bake for 35 to 40 minutes. DO NOT OVERBAKE OR IVY WILL PADDLE YOUR BOTTOM.&lt;/P&gt; &lt;P&gt;While cake has five minutes remaining, make the icing:&lt;BR /&gt; Combine all icing ingredients in a medium saucepan over medium heat and bring to a slow boil. Boil without stirring for 5 to 7 minutes, or until icing starts to turn dark. Do NOT allow icing to reach soft ball stage; icing should be caramel in color, but not sticky like caramel. Icing should be easily pourable.&lt;/P&gt; &lt;P&gt;Remove cake from oven and pour on icing immediately.&lt;BR /&gt; Allow to rest on the counter. In the other bowl combine the flour, soda, salt, cinnamon, cloves, allspice, and nutmeg and use a wire whisk to mix well.  Pour the prunes and milk into the large bowl with the sugar, eggs, and oil.  Add the dry ingredients and mix well with a spoon. (I use a wooden spoon).  Add vanilla extract and mix. Spray a 9 x 13 cake pan and add the batter.  Bake in preheated 325 degree oven for 45 to 50 minutes or until the center of the cake is done. Poke holes in the cake and pour over the cake while it is still warm.
