      <title>Almond Joy Cookies</title>

      <description>&lt;P&gt;These are so good and really easy to make.  If someone in your family has a nut allergy just don't add the almond.  The cookie is just as good. &lt;/P&gt; &lt;P&gt;1 tsp. vanilla&lt;/P&gt; &lt;P&gt;1 14 oz. can seeetened condensed milk&lt;/P&gt; &lt;P&gt;3 cups shredded coconut&lt;/P&gt; &lt;P&gt;1 whole almond for each cookie&lt;/P&gt; &lt;P&gt;1/2 tsp. salt&lt;/P&gt; &lt;P&gt;Preheat oven 350 degrees&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt;In the top of a double boiler combine milk, unsweetened chocolate and salt.&lt;SPAN style="mso-spacerun: yes;"&gt; &lt;/SPAN&gt; Cook over rapid boiling water, stirring often for about 5 to 8 minutes, or until mixture thickens.&lt;SPAN style="mso-spacerun: yes;"&gt; &lt;/SPAN&gt; Remove from heat and stir in vanilla and coconut.&lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt;Form cookies by dropping teaspoons of the mixture on a well-greased baking sheet, 1 inch apart.&lt;SPAN style="mso-spacerun: yes;"&gt; &lt;/SPAN&gt; Top each with a whole almond.&lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt; &lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt;Bake in the middle shelf of oven for 10 to 12 minutes, watching carefully after 8 or 9 minutes, as the bottoms can be to brown.&lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt; &lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt;Immediately remove cookies from pan with a metal spatula and cool on wax paper or parchment covered rack.&lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt; &lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt;These cookies freeze well.&lt;/SPAN&gt;&lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;/P&gt; &lt;P class="MsoNormal" style="margin: 0in 0.05in 0pt 0in;"&gt; &lt;SPAN style="font-family: 'Verdana','sans-serif'; font-size: 10pt;"&gt;Note:  I use 3/12 cups of bakers coconut. &lt;/SPAN&gt;&lt;/P&gt;</description>
