I never use the jar salsa any more; we love the fresh deli kind with minced tomatoes, onions, cilantro, and peppers.  SO good and not expensive.&lt;/P&gt;</description>

      <description>&lt;P&gt;My Meijer store also sells great Pico. I have to say, though, that I have become addicted to Mateo's Gourmet Salsa that I get from Costco. OMG, it's the best I've ever had. I had a few in my cabinet, but ran out around Memorial Day. They received a new shipment in July and every time I shop, I'm picking up several jars so I won't run out again. One of my favorite breakfasts is an omelet w/chopped green chilies, Mexican cheese, and a couple of healthy spoonfuls of Mateo's right over the top!&lt;/P&gt;</description>

(retails at about $20, lucky me Wegman's had them on sale for $3.)&lt;/P&gt; &lt;P&gt;The one tip I can give is to use white onions. A very cool Mexican guy taught me that 30 years ago. Edilberto, you out there? Write me! Did you open your picture frame shop?&lt;/P&gt; &lt;P&gt;Cooking onions (yellow) just don't have the bright flavor to match the lime juice, jalapeno and cilantro. - Bird&lt;/P&gt;</description>

If I'm ever blessed with an overstock of onions, tomatoes and peppers.......and feel like doing some chopping........I might try it!  I'd think salt, pepper, lime, and cilantro tossed in with tomatoes and whatever other chopped fresh veggies you want to add would be delicious.  One of my favorite salsa lines from the grocery store includes artichoke hearts.  You can also make fruit salsas.  FRESH!   &lt;/P&gt;</description>
