My counter has been taken over by tomatoes. Does anyone have a good recipe for a basic tomato sauce that I can freeze or can? I also have veggies to add to the sauce. Looking for something that I can use later for spaghetti sauce. Thanks so much!

Hi josiesopinion - I'm sorry I can't help with a recipe, but I wanted to share that my (Italian) mother-in-law used to just freeze her tomatoes, skins and all...she just put them in freezer bags. When she was ready to cook with them, she dropped them in boiling water for a minute or so, and the skins just popped off. (Just sharing, in case you don't get enough recipes! )

See kitchen and food talk June 4 for a great recipe " what's the difference between marinara and pomodora sauce" thread. (in the winter, I use Cento San Marzano canned plum tomatoes). If you have a food mill, it can separate seeds and skin.

You can also roast the tomatoes and then freeze on a tray. When frozen, put into a plastic ziplock bag.

I always drop them a few at a time into boiling water for a minute or so and then remove and the skin just peels right off. Then I crush them and place them in portions into zip lock freezer bags and freeze. Doing it this way you have crushed tomatoes for future use. They are good to go for any recipe that you choose in the future whether it be different types of tomato sauce or what ever you chose. They are good for up to one year in your freezer.

Another vote for cook and freeze in plastic baggies. That's what I did before I got canning jars and a pressure cooker. Used to pack up enough tomatoes for pasta sauce for my family that would last 6 months. Enjoy.
