    <description>&lt;P&gt;This recipe came from a diabetic cookbook, but you would never know it by the flavor. I've been making this for years.&lt;/P&gt; &lt;P&gt;&lt;STRONG&gt;&lt;SPAN style="text-decoration: underline;"&gt;CROCKPOT STUFFED PEPPERS&lt;/SPAN&gt;&lt;/STRONG&gt;&lt;/P&gt; &lt;P&gt;6 large "tall" bell peppers (green, red, yellow)&lt;/P&gt; &lt;P&gt;1 lb ground beef (you can pre-brown in skillet if you like)&lt;/P&gt; &lt;P&gt;1 cup rice (uncooked)&lt;/P&gt; &lt;P&gt;1 onion (chopped)&lt;/P&gt; &lt;P&gt;1 carrot (shredded)&lt;/P&gt; &lt;P&gt;1 tsp beef boullion granules&lt;/P&gt; &lt;P&gt;1/2 tsp salt&lt;/P&gt; &lt;P&gt;1/2 tsp pepper&lt;/P&gt; &lt;P&gt;1 can condensed Tomato Soup&lt;/P&gt; &lt;P&gt;1 (soup) can water&lt;/P&gt; &lt;P&gt;Cut off tops of peppers and clean out seeds, and ribs. Set aside.&lt;/P&gt; &lt;P&gt;Combine ground beef, uncooked rice, onion, carrot, boullion, salt and pepper in a large bowl. Add what ever extra spices you might like to the mixture. Stuff each pepper with the mixture and stand the peppers up in the crock pot.&lt;/P&gt; &lt;P&gt;In a small bowl, combine tomato soup and water, and pour evenly over the peppers.&lt;/P&gt; &lt;P&gt;Cook on low for approximatley 6-8 hours. Enjoy!&lt;/P&gt;</description>
