I am also of European decent, and have this recipe for a Chicken and Rice casserole that is delicious and has been passed all around. It has no tomato in it, but I think you could substitute tomato soup for the can of chicken soup in the recipe. I'll post the recipe and you can decide. At the very least, try it the original way, it's really yummy!

Chicken Casserole:

2 cups of cooked cubed chicken (breast or thigh, to preference but = about 4 full bone breasts, i normally bake my chicken for about 30 minutes in olive oil and S&P and some herbs, then let it cool and cut it up for this casserole)

2 1/2 cups of cooked rice (I cook my rice in chicken or veggie broth to infuse more flavor)

1 can of cream of chicken soup (can also use cream of mushroom, and for the tomato flavor use a can of tomato soup, or perhaps even a can of Ro-Tel... hmmm new ideas)

1 Tbsp of lemon juice

2 Tbsp of chopped green onions (4-5 green onions, chopped)

3/4 cup of Mayonnaise

1 cup of chopped celery

1/2 tsp of salt

1 small jar of pimentos (or the equivalent of chopped roasted red peppers, to taste)

Directions: Mix all ingredients in a big bowl, season to taste. (There is really no way to mess this up, add whatever you want, use turkey instead of chicken, add more veggies, it's all good)

Put in a large casserole dish 9x13, or I divide it into small casserole dishes and freeze them. Sprinkle with rice krispies OR sprinkle with bread crumbs and cheddar cheese OR don't sprinkle at all.

Bake at 375 degrees for about 30 minutes or until bubbly and golden. It is also delicious sprinkled with toasted almonds after baking. It's a dish you can make your own, but it's always a favorite at parties, and so simple.

I have never tried it with any tomato sauce, but I think it would work and be delicious. This is a recipe that can be adjusted so many ways. Thanks for your inspiration to change it up a bit, hope my recipe helps. Bon appetit!

Grandparents from Europe turn of the century... large family... mother would make us Chicken and Rice casserole, no doubt something her mother made. Other than the obvious, chicken and rice.. I remember a tomato sauce taste. I loved it as a child and have no clue what was in it. I added background info just in case someone might have experienced the same.

I only wish I asked instead just enjoying it.

I use chicken - precooked , rice - precooked - cream of chicken soup (or you can make your own from chicken broth) and some celery and carrots. Bake in a casserole about 30 min. A great way to get rid of leftover chicken.

Poor hubby, hope he likes Chicken and Rice.

Pinpoint.... Russia. Not sure that would help.

As I remember not spicy, very tasty but rather bland. I should have watched her in the kitchen and at the sewing machine. I missed out.

It was simple...chicken pieces, rice and I tasted some sort of tomato but very faint, not something you could really see, more like tomato used as a sauce but no red color or obvious tomato. I searched to see if she left any information in a cook book but no such luck. Well it was my favorite.

Bonnielu,

I had replied to you the other day, and just seeing your response now.

I did a quick search and found this Russian chicken & rice recipe. While it does not have tomato in it, look at the photos, it sure looks like it does! lol

Russian Chicken Rice Pilaf

http://ifoodreal.com/russian-chicken-rice-pilaf/

Also this next recipe looks VERY similar to above, and it does have a 1/4 cup ketchup in the recipe. I'm sure you can use either recipe (or combination of) and perhaps add the ketchup anyway.

http://natashaskitchen.com/2010/06/16/ukrainian-chicken-plov-rice-pilaf/

Maybe this comes close to what you're looking for?

Hope this helps!

.
