Go on Pinterest, search it. They have several great recipes using Quinoa including one for bruschetta that I tried. Yummy. Or try the weight watchers website (recipe/ forum section). Good luck! I like it but find myself using couscous more.

Quinoa is a pseudocereal and that is one of the ways I enjoy it. I put 3 Tbsp cooked quinoa in a bowl, drizzle a tiny bit of agave over it and then top it with blueberries and sliced strawberries and a splash of almond milk.

I use vegetable broth instead of water to improve the flavor. I separately stirfry onions, and some vegs and mix at the end. And I add virgin olive oil to everything.

I use quinoa in place of rice in many dishes. Last night I prepared quinoa "fried rice" with roasted pineapple, onions, and asparagus. It was not really fried, I sauteed garlic and fresh ginger in water, not oil, then added the already cooked quinoa to heat it. Then I folded in the veggies, adding some soy sauce, a pinch of crushed red peppers, and a squirt of lemon juice. I am one of those cooks that eyeballs everything, so I do not have exact measurements.

Cook a cup of Quinoa. Cool, add chopped cucumber, tomatoes, raisins (or chopped dried apricots), a sliced green onion. Dress with a little lemon juice and oil, add chopped mint or parsley. Serve with crumbled feta on the side.

I have this sort-of-tabbouleh when my vegetarian sister comes for a summer meal.

I didn't like quinoa much the first time I tried it. I got a package of TJ's Tri Color Quinoa and I love it!

One of the ways I use it is in my fresh fruit bowls. Any mixture of fresh fruits cut in chunks. Throw in some raw nuts ( I like walnuts and some pumpkin seeds ). Top it off with quinoa and a big sprinkle of cinnamon.

My husband and I eat it twice a week. I use my Ninja Multi-Cooker and sauté some diced onion and garlic in a little coconut or olive oil then add one cup of quinoa and two cups of water (or I sometimes use low sodium chicken broth). I will put some fish on the cooking rack and place it in the pot on top of the quinoa. I set the temperature for 350 and cook about 10-15 minutes (depending on the size of the fish). The quinoa cooks fine in this amount of time. That is enough for two meals so we eat half of the quinoa and save the rest to reheat and eat with a later meal. I've been buying the tri-colored quinoa and really like it.

Need to use broth next time as DH thought it didn't have much flavor. He is getting it anyways cuz it is better for you than other sides!
