I make bread for my husband to have with his coffee each morning and I made banana pumpkin early this month. It usually is enough for three smaller breads. As far as I know my husband liked it. Perhaps it was the recipe you used. I know my husband would not have eaten it if he didnt like it. The bread that is next in rotation is apple cider

Doesn't that sound good? Well I made it yesterday and ---against my usual safe guard of only making 1/2 a recipe if it is a new recipe to me ---I DOUBLED the recipe!!!!! With plans on gifting small loaves here and there----well---for whatever reason--it isn't great!!! It looks nice and you can taste the banana and pumpkin, but the texture is off--can't explain it but maybe it is too pancakey-----you know what I mean? It has height to it so it didn't "fall". Anyway, now what to do with it all. Dang it!!!!

If it is just a texture problem, could you cut it into small chunks and add it to pudding? To ice cream? A blender mix fruit drink?

All of that sounds amazing!! But after letting it sit for a couple days, it tasted just fine. I think what it needed was some nuts and/or choc chips mixed in for some texture. And think adding 2 soft ingredients together like the pumpkin and the banana just made it a bit soft. We ate it and I gave a loaf away to DDs co worker who loved it!!
