    <description>&lt;P&gt;&lt;EM&gt;&lt;STRONG&gt;Delicious Summery Cocktail =)&lt;/STRONG&gt;&lt;BR /&gt;&lt;/EM&gt;&lt;/P&gt; &lt;P&gt;&lt;EM&gt;1/3 cup fresh lemon juice&lt;BR /&gt; Zest of one lemon&lt;BR /&gt; 1 - 2/1/2-in. piece peeled fresh gingerroot - chopped finely&lt;BR /&gt; 1/4 cup sugar (or splenda)&lt;BR /&gt; 1 can (12 oz) frozen lemonade concentrate&lt;BR /&gt; 4 cups chilled club soda&lt;BR /&gt; 1 cup lemon-flavored vodka (optional..but yummy..lol)&lt;BR /&gt; 1/2 cup lemon sorbet&lt;BR /&gt; &lt;BR /&gt; Combine gingerroot, lemon zest, lemon juice and sugar in a microwave safe bowl and microwave on HIGH for 2 to 3 minutes. Or until sugar is dissolved. Place lemonade concentrate into a pitcher. Pour ginger mixture through a strainer into pitcher; discard ginger. Add club soda and lemon-vodka, if desired.&lt;/EM&gt;&lt;/P&gt; &lt;P&gt;&lt;EM&gt;To serve, scoop sorbet into glasses. Pour beverage over sorbet and garnish with a thin lemon slice.&lt;/EM&gt;&lt;/P&gt; &lt;P&gt;&lt;EM&gt;Makes 8 servings.&lt;/EM&gt;&lt;/P&gt; &lt;P&gt;&lt;EM&gt;ps.. not a bad cocktail at about 100 calories!
