Serve immediately or store in refrigerator up to one week. Reheat before serving.

Okay, bear with me, this is actually not a joke...

at the beginning of the year, my local grocery store had the Smart Ones for sale 5/$10. I bought ten of them, because they make easy lunches. I didn't realize that one of the boxes was all potatoes.

Fast forward to last week when I made them for DH and myself as a side dish for our salmon. The one package was just enough for the two of us, and he actually commented that he liked the potatoes!
