Transfer grated zucchini to a colander over the sink and stir in 1 tsp salt. Let stand 10 min, stirring a couple of times then squeeze out the excess moisture with your hands. Transfer drained zucchini to a large mixing bowl.&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Mix 2/3 cup sour cream with 1/2 tsp baking powder and let stand while zucchini drains (8-10 min).&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Into the mixing bowl with drained zucchini, stir in 4 eggs and sour cream mixture.&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Add cooked rice and 2 cups cheese. Stir in 1/2 cup chives, 1/2 tsp salt and 1/2 tsp Mrs Dash seasoning.&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Pour mixture into buttered casserole dish and spread 1/3 cup sour cream over the top. Sprinkle remaining 1 cup cheese over the surface and bake uncovered on the center rack at 400˚ for 40 min. Let stand for 10 min before serving.&lt;BR /&gt;&lt;BR /&gt;&lt;BR /&gt;PS - Correction - son said he liked it. He ate and immediately&amp;nbsp;left for some event he wanted to attend. Since he didn't say anything about dinner I jumped to the conclusion he didn't care for it. He was just in a hurry to get out the door.&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;/UL&gt;&lt;/DIV&gt;</description>

      <description>&lt;P&gt;Since canned cream of mushroom soup is too salty for our tastes.&amp;nbsp; I like to make my sauce using fresh mushrooms, butter, flour, and milk:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;1/2 cup butter&lt;/P&gt;&lt;P&gt;8 oz egg noodles, cooked to al dente and drained&lt;/P&gt;&lt;P&gt;1/2 onion, chopped&lt;/P&gt;&lt;P&gt;1 stalk celery, chopped&lt;/P&gt;&lt;P&gt;1 tsp minced garlic&lt;/P&gt;&lt;P&gt;1/2 lb mushrooms, sliced&lt;/P&gt;&lt;P&gt;1/4 cup flour&lt;/P&gt;&lt;P&gt;2 cups milk&lt;/P&gt;&lt;P&gt;10 oz canned tuna, drained and flaked&lt;/P&gt;&lt;P&gt;1 cup frozen peas, thawed&lt;/P&gt;&lt;P&gt;1/2 tsp dried thyme&lt;/P&gt;&lt;P&gt;3 tbsp bread crumbs&lt;/P&gt;&lt;P&gt;1 cup shredded cheddar&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Cook onion, celery, and garlic in 1 tbsp butter in skillet until tender.&lt;/P&gt;&lt;P&gt;Stir in mushrooms until most liquid has evaporated.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Melt 1/4 cup butter in big saucepan and whisk in flour until smooth.&lt;/P&gt;&lt;P&gt;Slowly whisk in milk and cook until smooth and slightly thickened.&lt;/P&gt;&lt;P&gt;Stir in tuna, peas, thyme, mushroom mixture, and cooked noodles.&lt;/P&gt;&lt;P&gt;Pour into greased 9x13" baking dish.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Melt 2 tbsp butter in microwave in small dish and stir in bread crumbs.&lt;/P&gt;&lt;P&gt;Sprinkle over top of casserole.&amp;nbsp; Top with shredded cheese.&lt;/P&gt;&lt;P&gt;Bake in 375 degree oven until bubbling and lightly browned, about 25 minutes.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;I do my usual pasta recipes with marinara sauce or I actually like olive oil and parmesan dressing the best.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I have a gnocchi mushroom spinach soup recipe as well, which I think I still have a few frozen servings.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I am not a fish lover, so I stick to my Italian roots instead.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Growing up, it was always pizza night, but of course watch the sauce and the toppings. White pizza works best.&amp;nbsp;&lt;/P&gt;</description>

Although not really a helpful answer to your question but what we end up doing, including tonight, is we go to our church's Fish Fry held all the Fridays during Lent. Works out well. We get our meatless meal while supporting the church. 💜✝️🐟</description>

I leave in the soft&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;bones but take out the dark skin.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Half of an onion and bell pepper chopped and&amp;nbsp; sauteed in butter.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 egg&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Salt, pepper and any other seasonings that you like&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Mix together all above ingredients and form into&amp;nbsp;patties&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Refrigerate for 30 minutes. I think it was the most requested thing I cooked for years. &amp;nbsp;I tweaked it, added different stuff ways , lots of grated cheese and toasted crumbs on top. &amp;nbsp;It is addictive to me.
