We have a ham bone in the freezer plus leftover ham from Thanksgiving . Will be making Split Pea soup on Sunday. If you don't have a ham bone, you can just use chicken stock or you can use ham hocks and store bought ham (diced thick slice). Serve with grilled cheese sandwiches or garlic bread. I cook the ham bone ahead of time to make the ham stock, refrigerate overnight and skim off the fat.

INGREDIENTS

2 tablespoons butter

2 ribs celery, diced

½ onion, diced

3 cloves garlic, sliced

1 pound dried split peas, rinsed

1 pound cooked ham, diced

1 bay leaf

1 quart chicken stock

2 ½ cups water

salt and ground black pepper to taste

DIRECTIONS

Melt butter in a large soup pot over medium-low heat. Stir in celery, onion, and sliced garlic; cook and stir until onions are translucent but not brown, 5 to 8 minutes

Stir in split peas, ham, and bay leaf. Pour in ham stock or chicken stock and water; stir to combine and simmer until peas are tender and soup has thickened, about 1 hour and 15 minutes. Stir occasionally

Season with salt and black pepper to serve

This is my favorite soup, especially in winter. I buy the Goya dry split peas and use the recipe on the bag. I always add a sliced carrot, sometimes a small sliced potato. No need to make broth separately. I cook the ham in with the soup and it flavors everything. Use lean ham and there isn't much fat.

Now I am in the mood for some.

As I cook the (dried split) peas in filtered water, I add the ham bone with the leftover meat still on it. Lots of meat and some fat. (!)

Then I add lots of onions, lots of carrots and let them cook in a bubbling simmer for an hour or two.

Will remove ham bone and add potatoes (big diced pieces), cut meat off bone and add back in with a bay leaf. I don't like to leave the bay leaf in the whole time--husband not wild about taste.

But no other seasonings, not even salt or pepper and no broth needed. Bone, meat, (fat!), onions and carrots make a good enough *broth*. It's a hearty soup for sure.

I like split pea soup but my husband doesn't. On New Year's Day I always make lentil soup. I also put in diced carrots, onions, and celery. I also put in 2 potatoes and after they are cooked I mash them and put them in the soup to thicken it. I put a ham bone in with meat on it and 2 cloves of garlic. I always have enough to put a container in the freezer.

Delicious! My father would make it even if he didn't have a left over ham bone, and he would slice circular pieces of Hebrew National hotdogs into it.

As kids, we loved that alternate!
