I don't have a specific recipe but it sounds easy to me after having scanned some just now. It's basically a one-pot stir fry of veggies (mainly bell pepper and onion it seems), some noodles cooked and added in at the end along with some sauce of basic ingredients--soy sauce, brown sugar, vinegar and sometimes peanut butter!

Read a few recipes, decide how YOU would like it and go for it as a stir fry! I don't think it sounds difficult, or something that has to have a lot of exotic ingredients. Make it yours, put what you want in and enjoy!

Shredded carrots or red peppers would work.

I personally wouldn't try to make this, though. By the time I bought all the ingredients it would probably be cheaper and easier to get a takeout order. I don't have much luck in recreating certain dishes, even with recipes.

It's one of my absolute favorite dishes but I've never made it. Every time I've ever had it in a restaurant, it's just had bean sprouts. I think onions, red or green peppers or broccoli would be fine though. Mushrooms sound disgusting in it but then I hate mushrooms lol!

I make an Americanized recipe for chicken pad thai:

8 oz rice stick noodles

3/4 cup warm water

1/4 cup fish sauce

1/4 cup lime juice

1/4 cup dark brown sugar

1 tbsp vegetable oil

3 cups shredded rotisserie chicken

4 tsp minced garlic

1/4 cup bean sprouts

Cover and soak noodles in hot tap water for 20 minutes to soften. Drain noodles.

Whisk warm water, fish sauce ,lime juice, and brown sugar in bowl until sugar is dissolved.

Saute chicken and garlic in oil in skillet until lightly browned, about 2 minutes.

Stir in noodles and sauce to coat noodles, about 3 minutes.

Stir in bean sprouts until noodles are tender, about 3 minutes.

Thank you so much for the ideas. I've made it a few times before and just wanted more ideas. Yes, it's a good dish, and it's really not that expensive. I usually keep a can of bean sprouts on hand, This time my husband bought some boc choy, so I'll add that, plus brocolli, carrots and peppers, and again thank you for the suggestions.
