      <title>HEALTHY TUNA SALAD</title>

      <description>&lt;P&gt;I am always posting not so healthy recipes so when I found this one I thought I would post it.  I made it by the recipe the first time but truly missed the mayo so I put a small amount of low fat Hellman's in it. I'm listing the proportions in the recipe but when I made it I used one of those individual cans of tuna.  I used about a Tb. of green onions, 1 stalk of celery with the leaves, I didn't have any parsley. I have no idea what piri piri (I guess it's a pepper of some kind) is but I had crushed red pepper flakes &amp;amp; I just put a sprinkle in to give it a little kick. I had some left over white cannelinni beans in the fridge so I put about 1/4 c. in.  For the dressing I already had fresh lemon juice in the fridge so I used about 2 tsp. or so with the olive oil &amp;amp; maybe 1 Tb. low fat mayo.  It was really delicious - I didn't even put it on bread.  I don't like a lot of heat but I really enjoyed the crushed red pepper flakes in it.  There was just enough in there to feel just a little kick!  I hope you guys like it.&lt;/P&gt; &lt;P&gt;HEALTHY TUNA SALAD&lt;/P&gt; &lt;P&gt;6 3/4 oz. tuna&lt;/P&gt; &lt;P&gt;3 green onions, minced&lt;/P&gt; &lt;P&gt;3 celery stalks, minced&lt;/P&gt; &lt;P&gt;1/4 c. minced Italian parsley&lt;/P&gt; &lt;P&gt;1/4 small lemon, juiced&lt;/P&gt; &lt;P&gt;1 tsp. piri piri or other crushed red pepper&lt;/P&gt; &lt;P&gt;1 Tb. olive oil&lt;/P&gt; &lt;P&gt;kosher salt, to taste&lt;/P&gt; &lt;P&gt;14 oz. white beans, rinsed with water &amp;amp; drained&lt;/P&gt; &lt;P&gt;Drain the tuna.  Place in a mixing bowl with the onion, celery &amp;amp; white beans.  Gently stir.  Squeeze the lemon over the mixture, stir.  Add the piri piri, parsley &amp;amp; olive oil.  Gently stir.  Season to taste with the salt &amp;amp; serve.  It doesn't say how many people it serves but the individual can made a nice size serving for me. &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt; &lt;/P&gt;</description>

      <description>&lt;P&gt;Thanks Golden Karen! &lt;/P&gt; &lt;P&gt;I always have Goya Small white beans but never thought to add them to tuna!  I won't miss the mayo cuz I love LOVE lemon!  It will do it for me!  I like the tuna in the pouch.  Nice and meaty!  Can you describe fish as meaty?  LOL&lt;/P&gt;</description>

      <description>&lt;P&gt;I also need a "touch" of mayo in tuna salad.  A variation I make sometimes includes green onion, celery, sliced Kalamata olives, splash of red wine vinegar. a bit of mayo. &lt;/P&gt;</description>

      <description>&lt;P&gt;I'll bet this is good! Tuna &amp;amp; white beans go well together.&lt;/P&gt; &lt;P&gt;Along the same vein as tuna/beans - years ago when I was vegetarian, I used to make 'mock' tuna salad, using garbanzo beans, or sometimes navy beans instead of tuna.&lt;/P&gt; &lt;P&gt;These days, if I'm trying to be good, I'll use plain yogurt &amp;amp; a bit of Dijon instead of mayo. It's surprisingly good, &amp;amp; tastes lighter.&lt;/P&gt; &lt;P&gt;Thanks for sharing!&lt;/P&gt;</description>

I probably could get along with the mayo but at least I'm using less &amp;amp; I always use low fat.  The second time I made it I kind of made a lemon aioli &amp;amp; just left the olive oil out.  I think I may try it again without the mayo &amp;amp; maybe add some cut up cherry tomatoes which would also add some "juice".  I added some of the celery leaves too to give it some texture.  I was just so surprised at how much I liked it &amp;amp; it was very filling which is good for me.  In fact, I had kind of a big lunch today so I may make this for dinner.  I hope you enjoy it &amp;amp; yes I think you can describe fish as meaty!&lt;/P&gt;</description>
