I have ways loved green peppers, but lately I've been sort of craving them. I use them in salad, spaghetti sauce, Spanish rice, and of course stuffed peppers. If any of you have a recipe that features green peppers , would you care to share it ?

Slice green peppers thinly, put on frozen pizza.

Saute onions, garlic green peppers, mix with any than mix with hamburger, chicken or pork with tomato paste. My sister stuffs then stuffs green peppers but that's to much work for me.

Also put fresh green peppers in tomato, onion salad with olive oil, oregano and salt.

It sounds like you have made green peppers with lots of dishes.

I like green peppers too! I saute them up with onions for sausage, peppers and onions. I just sear the Italian sausage on both sides, remove, then saute the sliced peppers and onions until they are slightly softened. Then I add the sausage back into the pan, cover and continue to cook until the sausages are cooked through.

I also like them on homemade pizza and in fajitas and chili. DH likes them too, and he always takes a sliced pepper to work to munch on. We found out that red peppers have more vitamin C, so he takes red peppers now.

I haven't tried this recipe yet, but it looks good. You can use just green peppers or a combo with the other colors.

Chicken Parm Stuffed Peppers

4 large bell peppers
1 + 1/2 cups cooked chicken breast, shredded or finely chopped
1/2 cup panko breadcrumbs
1 cup mozzarella, grated and divided
1/2 cup Parmesan cheese, freshly grated
1/4 cup fresh parsley, finely chopped
1 tablespoon olive oil
1 cup tomato sauce or marinara sauce
1 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/4 cup water (for baking)

Instructions
Preheat oven to 375F.
Cut the peppers in half vertically. Remove and discard the seeds. Place the bell peppers in a 9x13-inch casserole pan or large half sheet baking pan and set aside.
In a large mixing bowl, add chicken, breadcrumbs, 1/2 cup mozzarella cheese, Parmesan, parsley, oil, tomato sauce, salt, pepper, and garlic powder. Stir well until evenly incorporated.

Fill up each pepper with the chicken filling and top with 1 tablespoonful mozzarella cheese.
Add water to the casserole dish and cover the dish with aluminum foil. This creates steam in the casserole dish when baking, which makes the stuffed peppers tender more quickly.

Bake for 30 minutes. Remove from the oven and remove the foil.
