You might have access through Walmart to order it, but Shawnee Mills cornbread mix is good, cornbread and not cake! We like the white better than the yellow, but both are great. It is made in Shawnee, Oklahoma!

Another bonus, it is NOT expensive! We buy the little packets (often make two at a time and freeze some) but it is good. It takes 2 to make a decent sized pan of cornbread.

I use the White Lily Buttermilk White Cornmeal Mix and follow the recipe on the bag for Southern Cornbread. It's really easy, just 2 cups of the Cornmeal, 1 egg, 1/4 cup oil, and milk (or buttermilk iin my case).

Been using that for years. If you want yellow rather than white, they've probably got that too, I just prefer the white.

Making cornbread from scratch is so easy. I like to use white corn flour because that's not as sweet-tasting as yellow. I usually use whatever cornbread recipe is on the box, but reduce the sugar to 1 Tablespoon.

I like White Lilly, but you still need to add milk and eggs.

Baking it in a pre-heated cast-iron cornbread pan (with melted butter!) makes a big difference.

Basically it depends on the coronmeal to flour ratio. If you want a more cake-like result, you want more flour.

If you are like me and want a grittier, crunchy result, then you want more cornmeal than flour. And for that extra crunch, grease and heat your skillet or pan before you pour in the batter. I want that crispy crust and crunch but some want a cake/bread like result.

I love the Betty Crocker Cornbread and Muffin mix. So much so that I buy the case (nine bags) at a time when Amazon has it on sale for $5+. (Their price on it swings from $5+ to over $20 so catch it on the low side.) What I like about it is the lack of grittiness. If you want a grittier cornbread, it's not for you, but I love it.
