      <title>A Recipe for New England Clam Chowder</title>

      <description>&lt;P&gt;Made a big pot today.&amp;nbsp; It's of the thick and creamy variety:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;5 6.5-oz cans chopped clams, drained&lt;/P&gt;&lt;P&gt;2 8-oz bottles clam juice (Bar Harbor if you can find it)&lt;/P&gt;&lt;P&gt;1 cup chicken broth&lt;/P&gt;&lt;P&gt;1 1/2 lb russet potatoes, peeled and cut into small cubes&lt;/P&gt;&lt;P&gt;1 bay leaf&lt;/P&gt;&lt;P&gt;4 tbsp butter&lt;/P&gt;&lt;P&gt;2 tbsp olive oil&lt;/P&gt;&lt;P&gt;1 cup diced onion&lt;/P&gt;&lt;P&gt;1 cup diced celery&lt;/P&gt;&lt;P&gt;2 tsp minced garlic&lt;/P&gt;&lt;P&gt;1/2 cup flour&lt;/P&gt;&lt;P&gt;1 cup milk&lt;/P&gt;&lt;P&gt;1 cup half-and-half&lt;/P&gt;&lt;P&gt;1 tsp salt&lt;/P&gt;&lt;P&gt;1/2 tsp pepper&lt;/P&gt;&lt;P&gt;1 tbsp red wine vinegar&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;In large Dutch oven, bring clam juice, chicken broth, and potatoes to simmer.&amp;nbsp; Stir in bay leaf and simmer until potatoes are tender. Remove bay leaf.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Cook onions, celery, and garlic in butter and olive oil until softened.&amp;nbsp; Stir in flour for a minute.&amp;nbsp; Whisk in milk and half-and-half until there are no lumps.&amp;nbsp; Simmer until thickened.&amp;nbsp; Stir into pot of potatoes.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Stir in salt, pepper, red wine vinegar, and clams.&amp;nbsp; Bring to gentle simmer for 5 minutes.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp; &amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

And it says to "stir in flour for a minute" but there's no flour listed in the recipe so I need to ask how much to use? I make it very similarly (no vinegar), but 1st saute a few strips of bacon, then crumble it &amp;amp; set aside. I use the bacon fat &amp;amp; some added butter to make the roux.&lt;/P&gt;&lt;P&gt;I also like to add in a bit of thyme, either fresh&amp;nbsp;or freeze dried.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Top the chowder w/ some crumbled bacon, &amp;amp; of course, oyster crackers!&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;ETA: If you're ever in the mood to blow a bit of cash, St Ours carries an incredible dehydrated&amp;nbsp;clam broth powder. It comes in a box w/ 4 little packets of the powder. They were smashed to smithereens, and OMG the smell. Whew, I felt so sorry for the postman driving that around in the FL heat to deliver those broken jars of stinky sauerkraut to my address.
