I bought some pretty hefty sized whole garlic heads at my local farmers market to roast whole and use ----in EVERYTHINGcut off the tops and poured olive oil over top with just a sprinkle of coarse salt and roasted for an hour. My house smelled amazing!! I then put a bunch mashed up, in leftover polenta----was amazingly yummy!!!

I made aglio e olio for dinner last night and was wishing I had one of my step-dads massive garlic heads. . .

I didn't discover roasted garlic until I was a young bride and put a head inside a turkey. Wow, so very different than raw.

Try mashing some up and using as a base for a wrap. Nice!

Yum! And so good for you. When I roast if appropriate for the dish I add a whole head and like you cut off the top add olive oil.

Roasted a whole chicken the other night surrounded by lots of vegetables including garlic heads. The garlic is in the top right corner.

That is my favorite go to meal! So easy with melted butter brushed on it all, Montreal steak seasoning on the chicken, Montreal chicken seasoning on the veg.

Lots of leftovers, will make this week copycat Panera creamy chicken wild rice soup and chicken street tacos. Economical & delish!

I like garlic and roasted gives it a sweetness.

I have to look up Montreal seasoning now.

Roasted garlic cloves were in a pasta dish I had at a restaurant and it was absolutely delicious! I now roast heads of garlic, the same way you described and add them to my pasta dishes. What a difference!
