It can be baked the day before and reheated for the brunch.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;Pineapple Casserole&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;&lt;STRONG&gt;By&amp;nbsp;Paula Deen&lt;/STRONG&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;&lt;STRONG&gt;Ingredients&lt;/STRONG&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;&lt;FONT size="2"&gt;1 cup sugar (I would use a little less sugar)&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;6 tablespoons all purpose flour&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;2 cups grated sharp cheddar cheese&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;2 (20 oz) cans drained, and 6 tablespoons pineapple juice reserved pineapple chunks&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;1 cup made into crumbs buttery crackers&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;8 tablespoons melted, plus extra for greasing pan butter&lt;/FONT&gt;&lt;/LI&gt;&lt;/UL&gt;&lt;P&gt;&lt;FONT size="2"&gt;&lt;STRONG&gt;Directions&lt;/STRONG&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;Preheat the oven to 350 °F.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;Grease a medium-size casserole dish with butter.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined.       <description>&lt;P&gt;&lt;FONT size="4"&gt;I will post a recipe later for a make ahead dish. &amp;nbsp;I have been making it for years and should know it by heart but can't trust my memory..ha! &amp;nbsp; It is made with hash brown potatoes, cubed ham, eggs, cheese, etc. &amp;nbsp;Very easy and good. You can also fix bacon ahead and reheat. &amp;nbsp;I do that with sausage too and add apples to it. &amp;nbsp;Also, you can make a fruit bowl ahead of time but do not add bananas until day of brunch.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>I’ve catered events and made a casserole like Walker posted I’m allergic to eggs and can’t eat it but everyone I’ve served it people raves about it&lt;BR /&gt;Also a bowl of fresh / frozen fruit goes over really well , hash brown casserole which can be put together the night before and baked the day of the brunch , also an assortment of muffins&lt;BR /&gt;&lt;BR /&gt;This recipe was given to me by a coworker again it contains eggs but everyones raves about it&lt;BR /&gt;Ham and cheese quiche&lt;BR /&gt;9 inch pie shell baked for 7 mins at 425&lt;BR /&gt;Remove From oven reduce oven to 325&lt;BR /&gt;Add 1/2 cup cooked ham cubes&lt;BR /&gt;1 cup shredded Swiss cheese&lt;BR /&gt;1/2 cup shredded cheddar cheese&lt;BR /&gt;Set aside&lt;BR /&gt;In bowl whisk&lt;BR /&gt;3 eggs&lt;BR /&gt;2 tablespoons finely chopped onion&lt;BR /&gt;1 tablespoons flour&lt;BR /&gt;1/2 tsp salt&lt;BR /&gt;1/4 tsp pepper&lt;BR /&gt;1/8 tsp nutmeg&lt;BR /&gt;1 1/4 cup evaporated milk&lt;BR /&gt;&lt;BR /&gt;Mix well pour over cheeses and ham&lt;BR /&gt;Bake 35/45 mins until knife inserted in center comes out clean&lt;BR /&gt;Cool 10 mins&lt;BR /&gt;Slice into wedges to serve&lt;BR /&gt;&lt;BR /&gt;Another breakfast casserole that can be made the night before , refrigerated and baked the day of the brunch&lt;BR /&gt;&lt;BR /&gt;1 lb medium breakfast sausage&lt;BR /&gt;6 eggs&lt;BR /&gt;1 cup milk&lt;BR /&gt;1 tsp salt&lt;BR /&gt;1 tsp dry mustard&lt;BR /&gt;6 slices bread , cut into cubes&lt;BR /&gt;11/2 cup shredded cheddar cheese&lt;BR /&gt;4 oz mushrooms sliced , sautéed in butter&lt;BR /&gt;&lt;BR /&gt;Butter a 2 quart casserole dish set aside&lt;BR /&gt;Brown the sausage and set aside&lt;BR /&gt;In mixing bowl beat the eggs , milk , salt, dry mustard&lt;BR /&gt;Add the bread cubes, stir to moisten&lt;BR /&gt;Add the cheese , sausage and mushrooms&lt;BR /&gt;Place in casserole dish at this point the casserole can be refrigerated overnight&lt;BR /&gt;When ready to bake take out let set 15 mins bake 350&lt;BR /&gt;For 35 mins or until set&lt;BR /&gt;&lt;BR /&gt;One other thing I don’t have time to post the recipe but you can google there should be lots of recipes for French toast casserole&lt;BR /&gt;You can serve it with hot syrup on the side&lt;BR /&gt;&lt;BR /&gt;If you try any of the recipes I hope you enjoy</description>
