Substitute for Andouille Sausage?

I have Italian Sausage in the freezer that I would like to use. My son does not like peppers or tomatoes. So I was thinking about making a Jambalaya. This recipe does not call for tomato. But it says to use andouille sausage.

Do you think I could use the Italian sausage instead?

Maybe you should use your Italian sausage to make an Italian dish. Maybe sausage with broccoli rabe and orechiette, or some kind of Alfredo dish.
