      <description>&lt;P&gt;&lt;FONT size="4"&gt;Since you are looking for simple dishes or finger foods...&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;I'd recommend mini-quiche good for brunch ....easy to make or many stores have them premade. &amp;nbsp;One time I did a fruit platter made to look like rainbow.....got idea online....great ideas there. &amp;nbsp;My grandkids always enjoyed having the &amp;nbsp;"Green River" soft drink. &amp;nbsp;Here are a couple of easy recipes....I've never tried tinting cream cheese green in first one but guess you could. &amp;nbsp;Have fun!&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Bacon Cream Cheese Bites&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 loaf Pepperidge Farm Original White Bread, cut crusts &amp;nbsp;&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; &amp;nbsp;off&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 tub of cream cheese spread*&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup chopped fresh chives *&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 lb. bacon, regular thickness&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;* now you can even buy cream cheese with chives&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Preheat oven to 400 degrees. &amp;nbsp;Line baking sheet with aluminum foil. &amp;nbsp;Set aside.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Spread a thin layer of cream cheese on each slice of bread. &amp;nbsp;Sprinkle 1/2 teaspoon of chives on top of cream cheese. &amp;nbsp;Starting at one end, roll each slice of bread into a tight cylinder. &amp;nbsp;Wrap a slice of bacon around each cylinder.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Cut each cylinder in half.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Place on baking sheet and bake until crispy and bacon is cooked through, about 20-30 minutes. &amp;nbsp;Let sit for few minutes and serve warm. &amp;nbsp;&lt;BR /&gt;&lt;BR /&gt;Broccoli Bites&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;6 cups frozen chopped broccoli&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;2 cups crushed seasoned stuffing&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 cup grated Parmesan Cheese&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;6 eggs, lightly beaten&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup butter, softened&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 teaspoon salt&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/4 teaspoon pepper&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Cook broccoli according to package directions; drain and place in a bowl. &amp;nbsp;Stir in remaining ingredients. &amp;nbsp;Shape into 1" balls. &amp;nbsp;Place in a greased baking pan. &amp;nbsp;Bake at 350 for 11-12 minutes or until golden brown. &amp;nbsp;&lt;BR /&gt;&lt;BR /&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Can be frozen. &amp;nbsp;Makes about 5 dozen.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;ONE MORE...little time consuming but good! &amp;nbsp;You can make with colors of Irish flag using green and orange jello.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Rainbow Gelatin Cubes&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;4 packages assorted flavored gelatin&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;6 envelopes unflavored gelatin, divided&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;5 and 3/4 cups boiling water, divided&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 can sweetened condensed milk&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/4 cup cold water&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Combine one package flavored gelatin and one envelope unflavored gelatin. &amp;nbsp;Stir in 1 cup boiling water until dissolved. &amp;nbsp;Pour into a 9x13" pan coated with nonstick cooking spray; refrigerate until &lt;I&gt;almost&lt;/I&gt;&amp;nbsp;set but not firm, about 20 minutes.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Combine condensed milk and 1 cup boiling water. &amp;nbsp;In another bowl, sprinkle two envelopes unflavored gelatin over cold water; let stand one minute. &amp;nbsp;Stir in 3/4 cup boiling water. &amp;nbsp;Add to the milk mixture. &amp;nbsp;Spoon 1 1/4 cups of the creamy gelatin mixture over the first flavored gelatin layer. &amp;nbsp;Refrigerate until set but not firm, about 25 minutes.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Repeat from beginning of recipe twice alternating flavored gelatin with the creamy gelatin layers. &amp;nbsp;Chill each layer until set but not firm before pouring next layer on top. &amp;nbsp;Make final flavored gelatin on top. &amp;nbsp;Refrigerate for at least 1 hour after completing final layer. &amp;nbsp;Cut into 1" squares.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;NOTE....as I post this I can imagine eyes rolling with too many steps, etc. &amp;nbsp;I get it....I don't do often because of it but worth it when I do. &amp;nbsp;I change colors of gelatin for occasion. I will just add a little more food coloring than I usually do.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="comic sans ms,sans-serif" size="3"&gt;We have celebrated St. Patrick's Day in honor of, and now in memory of, my favorite uncle who was 100% Irish. He and my aunt, my mom's identical twin, never had children, so my late brother and I were "theirs" too. They lived in another state, but visited us a lot. And we went up every summer. I miss him so much.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="comic sans ms,sans-serif" size="3"&gt;So I make a traditional Irish dinner.
