Soaking lentils is not necessary, but there are benefits to soaking. I'll explain.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Traditionally, le Puy lentils are soaked to neutralize phytic acid, so your body can absorb the minerals in the lentils.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking activates an enzyme phytase, that aids in breaking down phytic acid for absorption of calcium, iron, and zinc.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking also triggers amylase that breaks down complex starch in lentils for easier digestion.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Lentils and other legumes contain oligosaccharides, a type of complex sugar, responsible for bloating and gas.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking removes these gas-causing elements.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking is not necessary for split peas either, but I soak&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;those also, for the above digestive benefits.&lt;/FONT&gt;&lt;/P&gt;</description>

It is a nice hearty winter meal&amp;nbsp; along with some crusty French or Italian bread.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="times new roman,times" size="4"&gt;It is necessary to use green lentils. They hold their shape and don't get mushy when cooked.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT face="times new roman,times" size="4"&gt;Lentils from the Puy region of France are the best to use. I get&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="times new roman,times" size="4"&gt;Sabarot brand green lentils from Puy. I find them on Amazon.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT face="times new roman,times" size="4"&gt;They are a little pricey, but worth it. Rinse your lentils with fresh water before boiling to remove any dust or debris. Cook on a stovetop, using 3 cups of liquid (water, stock, etc) to 1 cup of dry lentils. Be sure to use a large enough saucepan as the lentils will double or triple in size.&lt;/SPAN&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

I'll explain.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Traditionally, le Puy lentils are soaked to neutralize phytic acid, so your body can absorb the minerals in the lentils.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking activates an enzyme phytase, that aids in breaking down phytic acid for absorption of calcium, iron, and zinc.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking also triggers amylase that breaks down complex starch in lentils for easier digestion.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Lentils and other legumes contain oligosaccharides, a type of complex sugar, responsible for bloating and gas.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking removes these gas-causing elements.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&amp;nbsp; Soaking is not necessary for split peas either, but I soak&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;those also, for the above digestive benefits.&lt;/FONT&gt;&lt;/P&gt;</description>
