Here's one that doesn't require cooked rice. It does require arborio rice, which is easily found at any grocery store. I make my rice pudding in the pressure cooker and use arborio rice. The arborio rice makes it so creamy!

RICE PUDDING

1 1/2 quarts of milk

1 cup sugar

1/2 cup rice. I use Carolina rice x long

1 tea. Real Vanilla extract

1/2 cup raisins, if using.

Stir milk, sugar and rice in a heavy pot or slow cooker until sugar dissolves. Make sure to stir often if on stovetop.

Cook on low heat and stir, stir, stir or it will stick and burn. It doesn't burn in a slow cooker, but takes longer to cook.

When it thickens, turn off heat and stir in vanilla. You can add raisins about 5 minutes before the vanilla.

sprinkle cinnamon or nutmeg or whipped cream on top before serving...optional

On the cook top, it takes about 2 hours to thicken....lots of stiring. Takes longer in a low cooker.

I use 2% milk, but you can use whatever you like....even chocolate milk. This recipe is very creamy.

That is the original recipe. I always make more. My "take to a party" recipe ingredients for a crowd are

1 gallon milk

2 1/2 cups sugar

1 1/2 cups rice

2 1/2 tea vanilla

1 1/2 cups raisins

I make this often, by request. It's an inexpensive dessert to make for a crowd.
