      <description>&lt;P&gt;I always use the pastry cutter too. When I used to use the food processor it would get tough so I stopped.&amp;nbsp; I'd be interested in knowing the answer to this too as I have a kitchenaid mixer also.&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="3"&gt;I have done pie crust in both ---with great success. the only thing I do is make sure the butter is icy cold and cut into small chunks and use ice water, then when you can squeeze s a handful of the dough together and it holds together, it's ready to knead a few times and shape and put into the refer to chill. the food processor is quicker so you need to just pulse it until it looks like sand.&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>I would be using the standard paddle attachment.&lt;BR /&gt;I get concerned about over mixing.&lt;BR /&gt;Pie dough is a major PITA!</description>

      <description>&lt;P&gt;&lt;FONT size="5"&gt;Look for a good deal on the Cuisinart food processors this black Friday. &amp;nbsp;The old style simple ones with two tabs are fine, and you don't need a huge one.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="5"&gt;These are so useful--especially for pie dough and slicing and such. Would hate to do without one.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;I'm not good a making it, but I do know you don't want the butter or shortening to melt.&amp;nbsp; It's the fat exploding during the cooking process that makes a flaky crust.&amp;nbsp; So, that means doing it quickly along with starting with cold ingredients including the bowl, beaters, etc. if possible.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I did make croissants once and the recipe called for several rests in the fridge to keep the butter cold.&amp;nbsp; It actually wasn't that difficult, just time consuming.&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;I hope your pie crust turns out great! I make my pie crust the old-fashioned way with a pastry blender. This pie crust recipe is one I've made for years. Once I tried it, I never went back to any other recipe. Words can't begin to describe how flaky it is. It is the flakiest pie crust you will ever make.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;This recipe talks about making three pie crusts , but they will be thin and small. I always just divide the dough in half and freeze it just like she says to do. &amp;nbsp;I can't post a link, but if you google the name of this pie crust recipe, you will find it.       <description>&lt;P&gt;&lt;FONT size="3"&gt;I make my pie dough by hand but if I were to use my Kitchenaid for it, I might look at the whisk attachment as an oversized pastry blender. The wires of the whisk are very similar to the wires of a pastry blender. A couple of quick pulses with the whisk should cut the shortening into the flour like a pastry blender would. I'd probably then go to a hand mix with adding the water. The whisk should do a pretty good job of cutting in the shortening though which is the hardest part of making pie dough.&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;I make a lot of pies, probably in the neighborhood of four to six every month....sometimes more.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Pie dough should come together quickly. &amp;nbsp;It is not a dough that should be kneeded.&amp;nbsp;&lt;BR /&gt;&lt;BR /&gt;&lt;BR /&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;You want the fat to not be completely incorporated into the flour. &amp;nbsp;There should be pockets of fat intact that will create tenderness and flakiness inthe crust.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;I would never use a mixer to make pie crust. &amp;nbsp;I have used a food processor, but mixing by hand gives the best results.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;I place my flour and butter in the freezer before I start and use refrigerated cold water. &amp;nbsp;I make it quickly and don't kneed&amp;nbsp;&lt;/FONT&gt;&lt;FONT size="4"&gt;or play with the dough. As soon as it forms a crumbly ball, I roll it out.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;You should never allow the dough to warm up to room temp.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;I am making three pies today. &amp;nbsp;One apple and two pumpkin.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;My pumpkin is thawed out and my butter and flour is in the freezer.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Happy baking.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>
