I made chili this week. I like to boil the ground beef (until meat has "browned and is crumbly"). I drain the meat, squeezing all of the moisture out, along with all of the fat! I only use pinto beans, and simmer for several hours with a diced onion and jalapeno pepper (I don't remove the seeds}. For spices I use 3 T chili powder, 1 t. oregano, 1 t cumin, and 3 T bulger (a thickening agent). These spices are added to 2 # ground beef, and 2 quarts of tomato sauce. My family doesn't like whole bites of tomato in their chili, so I can ground tomatoes, peppers and onions together into a "thin" sauce. I serve my chili with shredded Cheddar cheese, diced raw onion, sliced jalapeno peppers, soda crackers, and/or corn chips. I keep reading people like to eat cornbread with their chili, and I intend to give it a try at some point. Here in the mid west, we often serve chili with a vegetable relish plate, dill pickles/okra with homemade cinnamon rolls and chocolate sheet cake for dessert.

I put a small can of tomato paste in mine, it makes the tomatoes taste even richer. I also mix up the beans, I may put in half kidney beans and half black beans. I also start by sautéing about half of a chopped onion, and then add the ground beef to sauté, I even add a small amount of finely chopped carrots or green peppers. These build color and flavor.

Also, depending on the type of ground beef to fat ratio, if the ground beef is fairly fatty, I make sure I drain that well after I have sautéed the ground beef. Having too much fat in the chili dulls the flavors of the other veggies and spices.

Lastly, I've had chili that was served over rice and it was excellent. My family has always had it just by itself.

You might look for diced tomatoes with chili seasoning already in them - gives them a little more flavor. I also season my ground beef with diced onion while cooking and garlic powder. Chili Man Chili is the seasoning packet I always add to the chili at the end. I know people use tomato juice or tomato soup, but I prefer just using seasoned diced tomatoes and their juice (canned), kidney beans and northern beans (1 can of each, drained), and a couple of cans of water with the ground beef & onions, and seasoning packet. I make it in my crockpot so that it can cook on low for 5 or 6 hours.

I always wanted to try the Wendy's copy cat recipe below but somehow always make it the same old way (Brown ground beef with a bag frozen diced onion, diced green pepper, diced celery, sliced jalapenos with some of the juice (jar), chili seasonings, place in crockpot and add 1-2 large cans petite diced tomatoes and juice, more tomato juice (bottle), Bush chili beans in chili sauce, heat in crockpot on high for 4 hours).

Maybe next time I'll be brave!

Served over mash potatoes is good too.

I do like Wendy's chili. I don't buy it often, but last Christmas after shopping I did stop and get one of the Wendy's Family Size chili deals (feeds 4-6 people @ $10 though I'm not sure they still offer it), and really enjoyed the convenience. Chili and Christmas cookies yum!
