For summer, I'd bring a nice pasta salad. I add broccoli, cauliflower, green beans, or snap peas.

carrots, cherry tomatoes, cubed cheese, black olives and pepperoni. Dressing over it and grated cheese on top.

A quick vegetable rice dish might be nice too. A Caprese salad. Fresh and light!

Macaroni or Potato, Taco salad. Mac and Cheese is always a good one.

It depends on the time of year and the theme or occassion. But a super easy, yet popular thing to bring has been-- a pizza. Who doesn't love pizza? LOL

I sometimes bring what might be on the healthier side. So many people enjoy bringing a more decadent choice. And I love those, too. But something healthy can be a welcome alternative to the rest of the dishes. If fresh cut fruit or veggie tray seems too boring, try a salad or a wrap cut into appetizer size slices.

For me, sometimes, I just keep it simple .Most pot lucks have so many rich dishes high in cholesterol or salt , so there have been times I've brought some fresh cooked vegetables such as garlic roasted broccoli or zucchini or fennel .

I recently went to one and didn't feel like making anything so took some rolls. I was the only one that did and they were gone very quickly.

By request, we always bring taco salad. Iceberg lettuce, tomatoes, taco cheese, ground sirloin, green onions, kidney beans, Marzetti honey french dressing and taco chips.

We always wait til ready to eat to add the dressing to avoid wilting and then put the taco chips on top.

I usually bring baked ziti... ziti, chopped beef, tomato sauce, mozz. cheese - easy and tasty!

Many years ago I purchased a Rachel Ray container called "Party in a Box". It holds two layers, a deviled egg tray and a divided tray. I almost always use this when I go to a pot luck. I make deviled eggs, and a tray of cold vegetables with dip. I never have eggs left to bring home, and any leftover vegetables become salad for the next week. I may/may not also take a pan of Monster Bars or Brownies. Another easy Summer choice (especially for children!) is a bowl of chilled grapes or chunked watermellon.

I took 30 lbs of fried chicken wings to a party last weekend and 3 dozen of deviled eggs. There were a few eggs left, but the chicken was gone.

A cold pasta salad with summer veggies and a light vinaigrette dressing is always nice. I also have a favorite macaroni & tuna salad I make all summer. I make it with elbows but you could sub a fancier pasta for a potluck.

For macaroni and cheese I have a great recipe from Food Network Kitchen 2014, not sure I can post a link here...tougher to find now on their site because it's older but I Googled it with 2014 and it comes up...I'll try to post the link here in a separate box in case they delete it. I've made that for a crowd many times everyone loves it!

I've also made Tyler Florence's "Ultimate Potato Salad", which is still on FN site...so you can identify it, it starts with Yukon Gold Potatoes, has capers, dill in it. Fantastic. Also made for a crowd that requested it again.

Last...particularly for a summer picnic or party, my dad used to make this simple hotdog & bean casserole everyone loved at a potluck. It's one pan-- chop into 1" pieces & partially brown the dogs first (can do in a pan on the stove first or start them first in oven.)

Then add can of baked beans, chopped white onion, white potato cubed, add ketchup and mustard, equal parts or to taste, and bake it all. I don't recall exact but I'd do about 275-300, until it's all done and bubbly.

I haven't been to one for a long time but when my street used to do block parties I would bring either a pasta or taco salad. Sometimes I would bring a dessert too such as cookies or brownies.

For the last three block parties we had, I grilled up several packages of hot dogs and stood them on end in a slow cooker to keep them warm. I also brought buns and all the "fixins", like mustard, ketchup, relish, sauerrkraut, etc. It wasn't a fancy addition to the parties, but it was surely a popular one, and very easy.

@Carmie : Chicken wings in my area are outrageous for takeout. No wonder they were all gone LOL.
