topic reception foods in Recipes

I have been asked by a good friend to prepare a couple of finger foods for a reception. She said " you know like open faced sandwiches etc". Well to be honest I have never made "Open faced sandwiches. I understand the recipes but I dont know how to prepare ahead and not have the ingredients dry out and the bread curl on the edges and so on. I have to attend the reception and then serve --so I will not be in the kitchen working at the last moment, I would like to prepare foods at home and take to the function. How does one keep the thin sandwiches fresh and appealing. thanks
