@retiredatlast

There is a video of French Chef Jacques Pepin making Braised Sweetbreads in Puff Pastry with Truffle Sauce for PBS. I think you could very easily adapt this recipe to the braised sweetbreads and chicken livers with mushroom gravy dish you enjoyed years ago.

Store-bought puff pastry would be a shortcut to his demonstation of .scratch-made puff pastry; sear the sweetbreads and chicken livers; then braise livers along with sweetbreads in mixture of chicken stock & dry white wine braising liquid; and substitute mushrooms (to add in with finely-diced celery, leeks, carrots and thyme that are sautéd before incorporating the reduced stock/dry wine sauce, i.e. gravy) for the truffles.

I liked how Chef Pepin used the puff pastry to serve the sweetmeats. Hope this helps. It looks like a really delicious dish!

Everyone was so helpful in my Tuna Salad Recipe post, I'm hoping you all can help with this.

My mother made sweatbreads once or twice a year, but she had no written recipe for it. It was so delicious.

All I can tell you is that she made it in a skillet and it was cooked with sliced lemons. It did not have a batter and was not browned.

Google didn't have anything close to her recipe.

Wish I had paid attention all those years ago.

Many thanks!

My only encounter with sweetbreads occurred at the original MGM in Las Vegas. We were dining in the restaurant there. Don Rickles and Shecky Greene were seated next to us. One of them ordered sweetbreads and the stench overpowered our meal. It was awful.

Back in the 50"s and 60"s a popular dish with sweetbreads was served often as an appetizer course at many Jewish events- weddings, bar and bat mitzvahs and family gatherings. The sweetbreads were braised with chicken livers in a gravy with mushrooms and served in a puff pastry shell. I know many of you will say YUCK, but it was actually tasty to me and my mother made it on accasion at home as well. I don't have a recipe for it, so if anyone does- please let me know.

My family owned a meat market and did their own slaughtering. We had all kinds of different things served at home.........pickled beef heart, pickled tongue and creamed sweetbreads on toast.

I never ate the heart or tongue but the sweetbreads were delicious. Had no idea what they were at the time and have not had them since.

We had to cook sweetbreads, along with all the other organ meats, when I majored in home ec in college. The liver, tongue and heart were okay but I'll never touch sweetbreads or tripe again, not even in menudo, a treasured local Mexican specialty.
