Does anyone have any batter bread recipes? DH is a vulture when it comes to freshly baked bread.

I had a tried & true pumpkin bread recipe, but lost it. Found a basic one, but I modified it somewhat. Turned out very well!

Wet

3/4 C vegetable oil

2 eggs

1 3/4 C sugar

15 oz. canned pumpkin (unsweetened)

1/2 C water

Almond & vanilla extract

Dry

1/2 tsp. baking powder

1 tsp. baking soda

1 1/2 tsp. salt

1 tsp. ground nutmeg

1 tsp. cinnamon

1/2 C chopped nuts (I used pecans)

2 1/2 C flour (I used all purpose)

Mixed wet and put in the Breadman first.

Mixed dry and put on top.

Put on the batter bread cycle (2 hours)

The Breadman is non-stick, but I did butter it first (no extra flour). I forgot to butter the paddle, so a little did stick to that.

They have bread machine cookbooks on Amazon. I have one in my saved items along with a bread machine. I want to order both before Thanksgiving. I started baking my own breads during Covid and realized how much we missed it! It is a lot of work though to have to do all the kneading myself. I had a bread machine ions ago and never replaced it when it stopped working. I am sure now they are most likely improved and I am looking forward to getting it.

Thnaks for posting your recipe
