I have a large slow cooker so I will triple this recipe and will omit the cilantro

Ingredients

4 medium ears sweet corn, cut into 2-inch pieces

1 can (15 ounces) coconut milk

1 medium onion, chopped

1/4 cup butter, cubed

6 fresh thyme sprigs

2 garlic cloves, minced

1 bay leaf

3/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup fresh cilantro leaves, chopped

2 green onions, sliced

Directions

In a 5- or 6-qt. slow cooker, combine first 9 ingredients. Cook, covered, on high 2-3 hours or until tender. Serve with cilantro and green onions.

Test Kitchen tips

The coconut milk mixture infuses the corn with flavor.

Two hours of cooking will produce crisp-tender corn. For softer corn, cook closer to three hours.

This corn recipe might be the greatest tasting thing on earth.

However, as a farm girl, it blows my mind to think about taking a fresh ear of corn that I could pull, shuck and eat raw right there in the garden, and cook it in a slow cooker for hours? I'm just too country for this one.

My mom would get the water on to boil and only then would go out to pick the corn (or send one of us). The corn would boil for 4 minutes and come out to go immediately under cold running water to stop the cooking as much as possible. Served right away. The cats got the spent cobs.

After I posted, I thought it might be considered insulting to the OP. I didn't consider the fact that some people don't have my experience with farm fresh corn. I should have been more considerate. So sorry!
