Cucumber appetizer

One package of rye or pumpernickel party size bread rounds. ( usually 2' by 2')

English cucumber or sometimes called a seedless cucumber peeled. They are in the wrapper. You can peel the cucumber and leave thin strips of the skin on for a striped effect when sliced for a pretty presentation.

One round 8 ounce tub of cream cheese

One package good seasons dry italian dressing

Dried dill weed

Combine cream and dry italian dressing. Slice cucumber in thin slices. Spread cream cheese on bread round. Top with a cucumber slice. Sprinkle with dried dill weed.

This one's very easy, both in the making and in the eating in a casual setting.

Portable Caprese Salad Bites

Grape tomatoes

Mini mozzarella balls (the same size as the grape tomatoes)

Fresh basil leaves

Balsamic vinegar glaze (I like Roland, available on Amazon)

Decorative toothpicks or appetizer spears

Load a tomato, basil leaf and mozzarella ball on a toothpick. Refrigerate in a container (like Lock and Lock) until you leave for your meeting. When you're ready to eat, arrange them on a serving dish or in the container and drizzle with the balsamic glaze. You can drizzle the glaze at home if you don't want to bring the bottle with you. The bites are small enough to pull them into your mouth in one one fell swoop and enjoy.

Another variation, if ripe melons are available to you in May, is:

Ripe melon balls

Ham or Prosciutto cubes

Mild cheese cubes

Basil leaves

This one doesn't use balsamic glaze. Load the toothpicks with one of each ingredient and serve & eat as noted above. The sweetness of the melon works well with the saltiness of the ham.

Not a new recipe but always well-liked!

Veggie Pizzas

1 tube Refrigerated Crescent Rolls*

1 (8oz) pkg. cream cheese, softened

1/2 cup mayonnaise

1/2 pkg. Hidden Valley Dry Ranch Dressing Mix

Grated Cheddar Cheese

Assorted vegetables of your choice...all chopped..green onions, broccoli, tomatoes, cauliflower, etc.

Heat oven to 350 degrees. Spread crescent roll dough on cookie sheet and pinch seams together. Bake 10 minutes.

Blend together cream cheese, mayonnaise and dry ranch dressing. Mix together about 1/3 cup of each vegetable. Put 1/2 of vegetables into the cream cheese mixture. Spread that on top of baked (and cooled) crescent roll. Sprinkle remaining vegetables on top. Then sprinkle grated cheddar cheese over all. Cut into squares for serving.

* Crescent Rolls can now be found in sheets which work real well for this recipe.
