Cream Cheese, softened&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 egg&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup sugar&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Pinch of salt&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Beat the above together well and add 1 cup CHOCOLATE CHIPS (regular or mini). &amp;nbsp;Set aside.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Next....mix together the following ingredients in separate bowl....&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 1/2 cups flour&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 cup sugar&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/4 cup cocoa&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/4 teaspoon salt&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 teaspoon baking soda&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 cup water&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/3 cup salad oil&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 teaspoon vanilla&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Grease or spray 4 mini-muffin tins. &amp;nbsp;Fill about 1/3 full with the chocolate mixture. &amp;nbsp;Put about 1 teaspoonful of the chocolate-chip/cream cheese mixture on top. &amp;nbsp;Bake at 350 for 15-20 minutes. &amp;nbsp;&lt;BR /&gt;&lt;BR /&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&lt;FONT size="4"&gt;NEXT INGREDIENT ..... (3 oz) cream cheese, softened*&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 cup flour&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;3/4 cup finely chopped dried APRICOTS&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;3/4 cup water&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/3 cup chopped pecans&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/4 cup sugar&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;2 tablespoons orange marmalade&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 teaspoon ground cinnamon&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/8 teaspoon ground cloves&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Topping: &amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;2 tablespoons cream cheese, softened&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 tablespoon butter, softened&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 teaspoon vanilla&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup confectioner's sugar&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Blend together butter, cream cheese and flour. &amp;nbsp;Chill for 1 hour. &amp;nbsp;Meanwhile, in saucepan, bring apricots and water to a boil. &amp;nbsp;Reduce heat; simmer for 5 minutes. &amp;nbsp;Drain. &amp;nbsp;Add the pecans, sugar, marmalade, cinnamon and cloves; set aside. &amp;nbsp;Shape chilled dough into 24 balls. &amp;nbsp;Press into the bottom and up sides of greased mini-muffin pans. &amp;nbsp;Spoon APRICOT mixture into each cup. &amp;nbsp;Bake at 350 for 25-30 minutes or until browned. &amp;nbsp;Cool for 10 minutes; remove from pans to a wire rack to cool completely. &amp;nbsp;For topping, combine cream cheese and butter; stir in vanilla until smooth. &amp;nbsp;Beat in confectioner's sugar. &amp;nbsp;Spoon a dollop onto each tart before serving. &amp;nbsp;Makes 2 dozen.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;* Small packages of cream cheese are hard to find. &amp;nbsp;I buy one package and use 1/3-1/2 of it. &amp;nbsp;Or the Whipped Cream Cheese containers would even be easier to use.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;NEXT INGREDIENT ..... Remove from the heat.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Carefully, whisk in the cocoa powder, then add the oil and egg yolks; whisk until smooth.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Add the sugars, vanilla, and salt to the chocolate mixture and whisk to combine. Make sure there are no clumps and the mixture is smooth.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;In the bowl of an electric stand mixer fitted with the whisk attachment, beat the egg whites on high speed until medium peaks forms.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Gently fold one-third of the egg whites into the chocolate batter. Add the remaining whipped egg whites to the batter and fold until just combined. You want to use a folding motion rather than stirring so you do not knock the air out of the batter.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Transfer the batter to the prepared springform pan. Bake for 25 minutes. This is to give the cake an initial start on baking (it will bake for a second time with the meringue). Meanwhile, you can start the meringue topping.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;/OL&gt;&lt;H3&gt;&lt;SPAN class=""&gt;Make the Meringue Topping &lt;/SPAN&gt;&lt;/H3&gt;&lt;OL class=""&gt;&lt;LI&gt;&lt;DIV class=""&gt;Gather the ingredients.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Wash and dry the bowl and whisk attachment of the electric stand mixer. Place the egg whites and cream of tartar in the bowl. Beat on high speed until frothy.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Once the egg whites have reached a frothy stage, reduce the mixer speed to medium and slowly add the sugar in a steady stream. Return the mixer to high and whisk until the meringue is thick, glossy, and forms stiff peaks.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Remove the bowl from the mixer stand. Add the cocoa powder and half of the hazelnuts to the meringue. Fold the mixture together until mostly combined, about 3 to 4 folds. Add the remaining hazelnuts and fold together 2 to 3 more times. The mixture should be mostly combined, but does not need to be uniform.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Once the cake is out of the oven, dollop the meringue topping all over the top of the cake. Use a spoon or offset spatula to spread to cover, creating swirly designs.&lt;/DIV&gt;&lt;DIV class=""&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/LI&gt;&lt;LI&gt;&lt;DIV class=""&gt;Bake until the meringue is crisp, lightly browned, and a skewer inserted in the middle down through the cake base comes out with a few moist crumbs, 25 to 30 minutes. Do not worry if the meringue is cracked as it will deflate and crack more as it cools, creating a beautiful rustic aesthetic.&lt;/DIV&gt;&lt;DIV class=""&gt;(If the meringue looks like it is browning more than desired, cover the pan with foil and continue to bake for the remaining time.)&lt;/DIV&gt;&lt;/LI&gt;&lt;/OL&gt;&lt;/DIV&gt;&lt;/DIV&gt;&lt;DIV class=""&gt;&lt;DIV&gt;&amp;nbsp;&lt;/DIV&gt;&lt;/DIV&gt;&lt;/DIV&gt;&lt;/DIV&gt;&lt;DIV&gt;Let the cake cool for at least 15 minutes. Run a knife or offset spatula around the edge of the cake to loosen it from the sides of the pan, then remove the springform.       <description>&lt;P&gt;Easy Chocolate-Dipped Shortbread Cookies&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 stick butter&lt;/P&gt;&lt;P&gt;1/2 cup powdered SUGAR&lt;BR /&gt;1 tsp vanilla extract&lt;BR /&gt;1 cup flour&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Mix butter and sugar together until creamy. Add extract, stir. Add flour and mix unti dough forms.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Form dough into a disc or log and refrigerate until firm. Then slice dough into desired shape or roll out and use cookie cutter.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Bake on parchment-lined sheet in preheated 350° oven until golden, no more than 7 min or less. Allow to cool.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Melt chocolate chips and dip cooled cookies. Allow chocolate to firm again.       <description>&lt;P&gt;&lt;FONT size="2"&gt;I grew snow peas one Summer and this is how I fixed them.....&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;&lt;FONT size="2"&gt;1 1/2 lbs fresh sugar snap peas&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;1 tablespoon olive oil (I used butter)&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;1 teaspoon salt&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;3/4 teaspoon black pepper&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="2"&gt;additional salt to taste&lt;/FONT&gt;&lt;/LI&gt;&lt;/UL&gt;&lt;P&gt;&lt;FONT size="2"&gt;Cut off the stringy ends from the sugar snap&amp;nbsp;pea pods.&lt;BR /&gt;&lt;BR /&gt;&lt;/FONT&gt;&lt;FONT size="2"&gt;Heat the oil in a large skillet over medium-high heat.&lt;BR /&gt;&lt;BR /&gt;When shimmering, add the peas, the salt and pepper and sauté for about 5 minutes, stirring every now and then.&lt;BR /&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;When sugar snap peas are crisp tender, remove them from the heat and transfer to a serving bowl.&lt;BR /&gt;&lt;/FONT&gt;&lt;FONT size="2"&gt;Season with additional salt if necessary and serve immediately.&amp;nbsp; &lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;Toasted sesame seeds are great with them if you have them.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="2"&gt;Next ingredient:&amp;nbsp; cream cheese&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;Tomato-Basil Soup&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 teaspoon olive oil&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup chopped onion&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 can (14 1/2 oz) diced tomatoes w/basil, garlic &amp;amp; oregano&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 can (15 oz) low-sodium tomato sauce&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 cup low-sodium vegetable broth&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 teaspoon sugar&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 teaspoon dried basil or 8-10 fresh basil leaves, shredded&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;4 ozs (half of reg block) CREAM CHEESE&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;salt and pepper to taste&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Heat oil in Dutch oven or soup pot over medium-high heat.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Add onion and cook for one minute. &amp;nbsp;Add diced tomatoes with juice, tomato sauce, vegetable broth and sugar. &amp;nbsp;Cover pot and bring to a boil.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Cut CREAM CHEESE into 1" cubes and add to soup. &amp;nbsp;Re-cover pot, reduce heat and simmer for 5 minutes to allow cheese to melt. &amp;nbsp;Uncover pot and use a whisk to stir soup until CREAM CHEESE is all melted and fully blended. &amp;nbsp;Stir in basil. &amp;nbsp;Serves 4. &amp;nbsp; (If using fresh basil you can add some to soup as garnish.)&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Optional....Grilled Cheese Sandwich on the side! 😋&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;NEXT INGREDIENT .....
