      <description>&lt;P&gt;&lt;FONT size="4"&gt;&lt;STRONG&gt;CHICKEN PIQUANT&lt;/STRONG&gt;--serve w/ rice, 8 servings&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;8 chicken breast halves&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/4 cup packed light brown sugar&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;2 teaspoons ground ginger&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 teaspoon dried oregano&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;2 cups dry red wine&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup olive oil&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1/2 cup soy sauce&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;1 garlic clove, minced&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Arrange chicken in baking dish.&amp;nbsp; Mix all ingredients and pour over chicken.&amp;nbsp; Cover &amp;amp; refrigerate 2 hours.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Preheat oven to 350 degrees.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Bake, basting chicken twice, about 40 minutes.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Transfer to a platter, tent with foil.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&lt;SPAN&gt;Strain marinade into medium saucepan.&lt;/SPAN&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Reduce to 2 cups, about 20 minutes.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;Pour half over chicken and pass the rest of the sauce at the table.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;Should have mentioned this when I posted the recipe, but it has been in my recipe archives for about 35 years.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;I hand-copied it from a source that I don't remember and didn't write down.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;We have enjoyed it on the rare occasions when I get around to making it.&amp;nbsp; It's one of&amp;nbsp; of many saved chicken recipes.&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;Another "savory" Piquant Chicken recipe, if anyone wants to venture&amp;nbsp; beyond the many Cajun-style dishes.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;________________&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;&lt;STRONG&gt;CHICKEN PIQUANT- --savory, not Cajun or tomato-based&lt;/STRONG&gt;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;&lt;FONT size="4"&gt;2-2.5 pounds boneless skinless chicken tenders or breasts&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;3/4 to 1 stick butter, melted&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;3-4 cloves garlic, minced&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;1-1/2 tsp salt&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;2 tsp chili powder&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;dash pepper&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;dash dry mustard&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;3 lemons, juiced&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;2 tsp. Worcestershire sauce&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Penzey's Arizona seasoning (&lt;STRONG&gt;optional&lt;/STRONG&gt; but adds great flavor)&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&amp;nbsp;&lt;/LI&gt;&lt;/UL&gt;&lt;OL&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Arrange chicken pieces in large glass baking dish; pat dry.&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Sprinkle both sides of chicken with Arizona seasoning, if desired.&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Mix melted butter, garlic, salt, chili powder, pepper, dry mustard, lemon juice, and Worcestershire.&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Dab butter mixture onto chicken pieces with a baster or pour over the pieces.&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Cover pan tightly with foil.&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;DO AHEAD: If you want to cook later in the day, just stick in fridge until time to cook.&lt;/FONT&gt;&lt;/LI&gt;&lt;LI&gt;&lt;FONT size="4"&gt;Bake at 350 for about an hour and a half.
