It was included in "The Best Instant Pot Pork Carnitas"&amp;nbsp;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;1 red onion, halved, sliced thin&lt;/LI&gt;&lt;LI&gt;Put in a medium bowl and place in sink&lt;/LI&gt;&lt;LI&gt;Pour enough boiling water in to cover&lt;/LI&gt;&lt;LI&gt;Count to 10 and drain&lt;/LI&gt;&lt;LI&gt;Put slices in container to use to store&lt;/LI&gt;&lt;LI&gt;To a&amp;nbsp; sauce pan add 1/2 cup Apple Cider Vinegar, 1/4 cup of Fresh Lime Juice, 1/4 cup sugar, 1/2 Tablespoon Kosher Salt, and a pinch of Red Pepper Flakes.&lt;/LI&gt;&lt;LI&gt;Heat on Medium until sugar dissolves, about 3 minutes.&lt;/LI&gt;&lt;LI&gt;Pour over onions and let sit until cooled&lt;/LI&gt;&lt;LI&gt;Store in fridge up to 2 weeks ( but frankly, I've h9ad them in fridge much longer, if I don't devour them or I make double, triple batches).
