Beat together the cream cheese, ½ cup of sugar, egg yolk and vanilla. Spread the bread slices with cream cheese mixture and roll them corner-to-corner. Mix the remaining 1 cup of sugar with the cinnamon and quickly roll the slices through the melted butter (or brush them with a pastry brush) and then through the cinnamon-sugar mixture. Bake in a 375 degree preheated oven until lightly browned. Cool on wire rack. Best served warm. These freeze very well.&lt;/SPAN&gt;&lt;BR /&gt; &lt;BR /&gt; &lt;SPAN class="textexposedshow"&gt;Tara’s Tip: For extra zip, you can add lemon or orange zest to the cream cheese, or a dash of almond extract.
