      <description>&lt;P&gt;I'm hoping someone has an easy baked apple side dish to be served as an accompaniment to ham &amp;nbsp;at a buffet dinner. I'd like it to be good either hot or room temperature. I'll be serving around 40 people, both adults and children. I got the idea from the Honey baked ham store, but their apples are too expensive for a crowd.Thanks for any help you can provide.&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;IMO&amp;nbsp; a full apple is too much to serve with a big full dinner.&amp;nbsp; I'd consider sliced apples baked with a sauce or syrup.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>My simple apple dish starts with dicing or cubing apples (I use honey crisp), sautéing in butter, brown sugar and cinnamon for about 15 - 20 minutes. Then chill before serving. The apples are softened and the sauce is yummy. We have with ham and/or sometimes as dessert with vanilla ice cream.</description>

      <description>&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;It will take a whole lot of apples to feed 40 people...at lease one for each person. &amp;nbsp;Maybe you can make them in a crock pot.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I would peel and cut apples into thick slices. &amp;nbsp;Put them in a crock pot with lots of butter and either brown or white sugar and cinnamon and let them cook unril they're soft but not mushy.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;If you over cook them, you will have applesauce. Always cook them with the lid off. Apples get watery...or use cornstarch as a thickener if you use a lid.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;You could also cook them in an oven in your Turkey roasting pan.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;If you wish you could add nuts and/or raisins or dried cranberries too.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

I did see some really good suggestions though.&lt;/P&gt;&lt;P&gt;Kate2357, your idea of sauteing them and serving cold is probably the easiest. I'll try that first on a small scale.
