      <title>Oatmeal Pancakes</title>

      <description>&lt;P&gt;2 1/2 cups rolled oats&lt;/P&gt; &lt;P&gt;1 1/2 cups water&lt;/P&gt; &lt;P&gt;2 egg whites (I used the whole eggs)&lt;/P&gt; &lt;P&gt;2 tsp. olive oil&lt;/P&gt; &lt;P&gt;3 tsp. cinnamon&lt;/P&gt; &lt;P&gt;Mix and fry pancakes turning once.&lt;/P&gt; &lt;P&gt;I made these this morning, and they are filling and good.  On top I used Earth Balance and maple syrup.&lt;/P&gt;</description>

I'm back - started again with the glycemic index eating plan and using really good eating real recipes.&lt;/P&gt; &lt;P&gt;mima - I made this for both my husband and me.  He had 3 pancakes, I had two and I have one left over in the fridge.  Old fashioned oats, I never buy the instant kind, only real eating for us.  I don't use anything that has preservatives in, or added stuff that is not food. My oats are organic.&lt;/P&gt;</description>

      <description>&lt;P&gt;After I posted I decided to whip these up and try them.  They are delicious.  I made 1/2 a recipe and made 2 large pancakes.  I ate one and will eat the other one tomorrow. &lt;/P&gt; &lt;P&gt;I used whole eggs and olive oil.  I topped with I can't believe It's Not Butter spray and sprinkled very lightly with stevia.  They would be better with syrup, but I'm trying to cut out sugar (for now).&lt;/P&gt; &lt;P&gt;Thank you so much!&lt;/P&gt;</description>

Instead of the butter spray, we use Earth balance - there is no bad ingredients in it! Have been using that since my husband had a scare with pre-diabetes.  He's out of that scare now, just by eating good wholesome, and organic foods.  I have checked the ingredients on Smart Balance, it does have stuff in it that isn't food. Earth Balance is better.  Oh, it tastes great, too!  &lt;/P&gt; &lt;P&gt;Today sometime I'll post a recipe for our Amish Baked Oatmeal, which is very good, too.&lt;/P&gt;</description>

We only have Walmart to shop at, so the choices are limited.
