My favorite meatloaf recipes are Ina Garten's ground turkey meatloaf and Chef Paul Prudhomme's traditional meatloaf, which i have made many times to rave reviews. I am sure both recipes can be found via Google.

Hubby loves mine. I got my recipe from my MIL because hers was so good!

2.5 lb. chopped meat (80/20)

2-3 slices bread, soaked in ¾ cup milk

1 chopped onion

1 egg

paprika

parsley

salt and pepper

Soak 2 or 3 slices white (or oatmeal) bread in approx. 3/4 cup milk. Add chopped meat and chopped onion, 1 egg, salt, pepper, parsley and paprika (for color). Mix together well.

Start at 400 for 30 to 45 min., covered. Turn down to 350 and uncover for 30 to 45 min., until you slice it in the middle and it's no longer pink. Drain off excess grease (leave about 2 tablespoons to mix with flour, for gravy).

Personally, I think one thing that makes it so good is using bread (soaked in milk) instead of bread crumbs.

Here's how I make my meatloaf. I don't measure anything, just eyeball the ingredients as I'm adding. Everyone loves it, and I have a friend who's family hated her meatloaf because it was always bland and dry, so I told her how to make it this way and when she did her family ate the entire thing, then requested it the next night!

1 Package ground turkey or beef

diced onion

diced celery

Parmesan cheese from the Kraft container (tastes better that way)

one egg

Seasoned or Italian breadcrumbs

some milk to moisten the breadcrumbs

half envelope onion soup mix

spoonful of whole grain or dijon mustard

Couple splashes of A-1 sauce

Season salt (just a little bit, you don't want it overly salty)

Pepper

Mix everything in a bowl, then bake in a loaf pan at 375 degrees for about an hour.
