If the Seahawks make it to the Super Bowl I will definitely be making this!!

Well I am true to my word (see above). I will be making this today!

I took this across the street to a Super Bowl party at half time (I am not a football fan but they said I had to come because of the Seahawks!). Everyone loved it. I made it in two smaller dishes so I could sit it at each end of the table. Hostess and two other guests requested your recipe (I did give you credit). I will be making this again but only when I have guests so they can share the calories!!

I'm hoping that your holidays were happy and healthy. It was a lovely holiday season for us. We had family and friends staying with us until yesterday so I haven't had much time to be online with my RS friends. A dear friend of ours made this over the holidays and we just couldn't get enough of it. I know that the holidays are over but I thought you'd still like to try this one if you need a quick, tasty and "not the usual" dip for any occasion. This is a really delicious hot cheese dip with all of the flavors of lemony and buttery shrimp scampi with plenty of chunks of succulent shrimp. It's addictive!

2 tablespoons butter
1/2 pound shrimp, shelled, de-veined and coarsely chopped
4 cloves garlic, chopped
1/2 teaspoon red pepper flakes (optional)
1/4 cup dry white wine
1/4 cup lemon juice (~1 lemon)
4 ounces light cream cheese, room temperature
1/4 cup mayonnaise
1/4 cup light sour cream (or Greek yogurt)
2 tablespoons parsley, chopped
1/2 cup mozzarella, shredded
1/4 cup Parmesan cheese, grated

Heat the butter in a pan over medium heat and add the shrimp and cook until it just turns pink. Add the garlic and red pepper flakes, cook until fragrant, about a minute, and set the shrimp aside. Add the wine and lemon juice and simmer to reduce by half. Mix the shrimp, pan sauce, cream cheese, mayonnaise, sour cream, parsley, mozzarella and parmesan and pour it into a 2+ cup baking pan. Bake in a preheated 350F oven until golden brown on top and bubbling on the sides, about 15-20 minutes. Serve hot with toasted baguette or crispy crackers. Yum!

Makes (4) servings. Trust me, double or triple it! :-)

Birkin baby, I've never cooked with wine and don't have any in the house, so I wasn't sure what to do for that ingredient. By looking at the labels, I don't know the difference between a dry wine or any other. I appreciate any suggestions for a substitute or some guidance as to what brand of wine to buy.

OMMMMMMG!! I can hardly believe this! I had shrimp scampi and stuffed mushrooms for appetizers at X-Mas dinner (sit-down) for 13 people. I would have a terrible uprising of my family members if I didn't have these every year.

And now I see this and I'm fairly drooling. I can make it this weekend for DH and myself and NOT HAVE TO SHARE IT!! I have everything on hand but the parsley, and I say to heck with that. We will live without it, and enjoy every single drop! Thanks for posting this. I LOVE YOU!!! AnneMary AND A VERY HAPPY AND HEALTHY NEW YEAR TO YOU TOO!
