Ever Drink Horchata?

I'd never heard of this stuff until I moved to New Mexico and saw a waitress refilling glasses in a restaurant from a big pitcher. I asked her what it was and she gave me a sample. It's a refreshing summer drink that the kids can have. I'm very fond of it. Sort of something like almond or coconut milk. I'd use artificial sweetner in lieu of sugar.

@Kachina624 I've tasted it but not something I care much for.

But when my son married my DIL 27 years ago he had gotten very close to her family. Her parents are from Mexico and he fell in love with this drink.

Whenever we'd go out for Mexican food both he and my younger GD would have this, they love it!

@Kachina624 I've never heard of it...is it a local drink? I've lived in the SW for 49yrs...how could I have missed it? I'd sub almond milk and stevia...maybe I'll make it this weekend...thx...DW

@dancingwoman I think it's pure Mexican. They use so much cinnamon. It's very popular with kids. I think our Walmart sells it in the dairy case with milk products. It's available in most Mexican restaurants here. It's off-white and looks like milk.

I think I'd reduce the cinnamon in that recipe as it seems like a lot.

I like horchata, and Jamaica (pronounced ha my cu). Horchata is rice based, and I think that jamaica is hibiscus based...not sure. I used to drink both when I spent a lot of time in Ensenada, Baja California. They are very common, popular refreshments, sometimes available in Mexican restaurants and in Hispanic supermercados.

never had that drink....but it did bring back a childhood memory....i'm armenian...and during the summer my mother would make a drink in the blender using homemade yogurt diluted with a little water and garden cukes.....it was delicious......

@Kachina624 Someone on 90 Day Fiance went to Mexico and was introduced to a drink like this recently. I'm thinking it's the same thing. It sounds really good.

@It's a very tasty drink. It reminded me of drinking a guiltless shake. The Golden Corral in my area used to serve horchata from a fountain at the cashiers-sodas/iced tea/water/straws station. So glad to see this recipe because GC has been closed since the pandemic and I don't ever intend to frequent a buffet again.

I have a container of unsweetened almond-coconut milk in the fridge. I wonder how that would work in this recipe or maybe using rice milk? Couldn't be a bad flavor combo as I often make microwave piña colada rice pudding.

@vabreeze Now that you mention it, Golden Corral was the place I saw the waitress refilling glasses. Ours here closed about 5 years ago which was strange because it was crazy busy.

Will you share your recipe for piña colada rice pudding? Sounds good.

I grew up on the Jamaica drink...hibiscus based. Horchata is very popular here in the southwest; I know many people who love it. But I cannot stand horchata...too much like milk. I do not drink white milk...it gags me!!

I love Hibiscus tea!! Especially iced, with a little sugar, allspice and nutmeg. When I lived in Jamaica we used to drink a version of this all the time.

Love it! First time having it was in our previous hometown Cafe Rio mexican restaurant as a regular offering. (non alcoholic). It has a rice milk base.and cinnamon. Just bought an alcoholic horchata bottle recently at our new Total Wine store...yum! Introduced a friend to it whom had never heard of it either. She really likes it now. We both like Rumchata too. It may be an aquired taste.

Sorry I didn’t see your post earlier. I was having a sleepless night and just reading to see if there were posts I hadn’t read in the Kitchen and Recipe forums and came across yours.

This Piña Colada Rice Pudding in a Mug recipe is based on tweaks I made to a MV Rice Pudding in a Mug recipe a poster provided here. These notes were written for a girlfriend who wanted detailed instructions.

Microwave Piña Colada Rice Pudding in a Mug

Ingredients

1 large egg
1/4 cup granulated sugar
1 cup milk coconut cream
1/2 tsp.pure vanilla extract
Pinch of kosher salt
Pinch of ground cinnamon [Cinnamon & coconut together??? I didn’t use but I guess it’d be ok]
1/4 cup + an additional half of 1/4 cup= 3/8 cup raisins dried cherries, plumped in the microwave in a small bowl of part water and Capt. Morgan’s Coconut Rum (save some of the liquid to add to the coconut cream, about a little less than 1/4 cup)
1/4 cup crushed pineapple with juice
2 cups cooked rice, cooked in coconut water (just happened to have a container of Zico C.W.)
Toppings (optional): Whipped cream, confectioners' sugar, cinnamon-sugar or fresh fruit

Directions

In a medium bowl, whisk together the egg and sugar with a fork. Stir in the milk cream of coconut, vanilla, and salt and cinnamon. Add the raisins plumped up cherries and rice and stir them well so they are completely coated with custard.

Divide the mixture between two large mugs. Microwave separately for 1 to 2 minutes each until the custard (egg-coconut cream mixture) is absorbed and the pudding is firm. Serve warm or chilled.

I cooked it in the same bowl that I mixed it in which holds 1.75 quarts and is 6” in diameter and 3” high. It took about 5 minutes, done in 30 second increments after the first 2 minutes (my MV is old; yours may take less time). Not bragging but it was really good!

we make that also.....you must use the middle easter/persian cucumbers.

we also add dried mint to it.

some like to use club soda instead of water.

they also bottle it and you can buy it ready made.
