      <description>&lt;P&gt;&lt;STRONG&gt;Pecan Pie for One&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&amp;nbsp;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Ingredients&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;SHORTBREAD CRUST&lt;/STRONG&gt;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;&lt;STRONG&gt;2 1/2&amp;nbsp;tablespoons&amp;nbsp;butter&amp;nbsp;, softened&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;2&amp;nbsp;tablespoons&amp;nbsp;sugar&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1/4&amp;nbsp;cup&amp;nbsp;all purpose flour&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1&amp;nbsp;tablespoon&amp;nbsp;cornstarch&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1/8&amp;nbsp;teaspoon&amp;nbsp;salt&lt;/STRONG&gt;&lt;/LI&gt;&lt;/UL&gt;&lt;P&gt;&lt;STRONG&gt;PECAN PIE FILLING&lt;/STRONG&gt;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;&lt;STRONG&gt;1/4&amp;nbsp;cup&amp;nbsp;corn syrup&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1&amp;nbsp;egg&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1/4&amp;nbsp;cup&amp;nbsp;sugar&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;pinch&amp;nbsp;salt&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1&amp;nbsp;tablespoon&amp;nbsp;butter&amp;nbsp;, melted&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1/2&amp;nbsp;teaspoon&amp;nbsp;vanilla extract&lt;/STRONG&gt;&lt;/LI&gt;&lt;LI&gt;&lt;STRONG&gt;1/3&amp;nbsp;cup&amp;nbsp;pecans&lt;/STRONG&gt;&lt;/LI&gt;&lt;/UL&gt;&lt;P&gt;&lt;STRONG&gt;Instructions&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Preheat oven to 350 degrees F (177 degrees C).&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;In a bowl, cream butter and sugar until light and fluffy.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Add flour, cornstarch and salt. Mix until combined.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Press dough onto bottom of lightly greased 5-inch baking dish.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Bake 12-15 minutes or until light golden.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Set aside and prepare filling.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;TO MAKE THE PECAN PIE FILLING&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Mix corn syrup, egg, sugar, salt, butter and vanilla in a bowl using a spoon.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Stir in the pecans.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Pour filling over shortbread crust.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Bake on center rack of oven for 30 minutes.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Remove from oven and let pie cool on wire rack for a 2 hours.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>Thanks for sharing this, may try it. I am one who needs portion control. Have an idea that is why mug cakes have become so popular, at least at my grocery store there is a large selection. Back to the pie, probably could make in my air fryer or my newly purchased Curtis Stone perfect cooker. The recipe book that came with the Perfect Cooker has several desert recipes for probably two servings.</description>

      <description>When I make pecan pie, it is always in the fall and during the holidays. I never turn on the oven in the summer...When I make my pecan pie, I make the crust and put in the pan. I put the pecan halves in the crust, then put all the filling ingredients in the blender and blend just a few seconds...makes all the eggs and sugar really smooth. Then just pour over the pecans in the crust and bake. Easy. You can also bake the whole pie, cool, and freeze slices separately if you want portion control.</description>
