Enjoy!&lt;/P&gt; &lt;P&gt;&lt;SPAN style="text-decoration: underline;"&gt;&lt;STRONG&gt;Maple Cashew Cookies&lt;/STRONG&gt;&lt;/SPAN&gt;&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;&lt;EM&gt;Makes about 2 dozen large cookies&lt;/EM&gt;&lt;BR /&gt; &lt;BR /&gt; 1/2 cup raw sugar&lt;BR /&gt; 1/2 cup packed brown sugar&lt;BR /&gt; 1/4 cup coconut oil&lt;BR /&gt; 1 egg&lt;BR /&gt; 1 1/2 cups all purpose flour&lt;BR /&gt; 1/2 teaspoon baking soda&lt;BR /&gt; 1/4 teaspoon sea salt&lt;BR /&gt; 1/2 cup finely chopped cashews&lt;BR /&gt; 2 teaspoons plus 1 tablespoon maple syrup (I used local, grade B)&lt;BR /&gt; &lt;BR /&gt; &lt;BR /&gt; Preheat oven to 375 F&lt;BR /&gt; &lt;BR /&gt; Mix sugars, coconut oil and eggs thoroughly.&lt;BR /&gt; &lt;BR /&gt; In a separate bowl mix flour, baking soda and salt. Mix the sugar mixture into the flour mixture. Add cashews plus 2 teaspoons of maple syrup. Roll dough into 2 dozen balls (about the size of a ping pong ball).&lt;BR /&gt; &lt;BR /&gt; Flatten each ball onto a cookie sheet, and &lt;STRONG&gt;place flattened cookies at least 2 inches apart. Give them room because they’ll expand a lot.&lt;/STRONG&gt; Bake for 10-12 minutes, or until they are crispy and brown. Brush each cookie with some of the remaining maple syrup, because you really can’t have too much!&lt;/P&gt;</description>
