My COSTCO was out of steak and some fish, so, I bought duck ...

The recipe on the package just calls for salt, pepper and paprika.

I don't have paprika because I find paprika has no flavor.

 I'm using an INSTANT-POT.

As per the instructions on the bag, I removed the neck & gizzards, which I assume I just throw in the pot.

Anyone have any helpful hints?

I know this isn't helpful. I can't stand duck. It's dark meat, and, in my experience, way too strong and gamey tasting.

I hope some good cooks, who do like it, can help!

Yes i cooked it just like you would chicken. You would have to look online as to the internal desired temp, but its pretty much like the dark meat of chicken. It is a little greasier, and if you have any apricot or orange marmalade that tastes good as a last 15min basting product. Bona petit!

We love duck. I haven't had one for a few years though. I always cook it the same as I would a chicken or turkey.

It's not all that much different except there is no white meat. Because of that, there it is a bit more fat. The meat is tender, IMO.

Enjoy your duck.

Ditto to fhunt. I recently attended a cooking class where duck was prepared. The biggest issue is handling all the fat, and you must do that! I don’t think a crock pot would be the best for duck prep. I’ll bet there are you tube videos that show techniques. I love duck and wish I could have a bite of yours!

If it were me, I would not use an instapot for the duck. Duck is like goose meaning it has a lot of fat and I mean a lot. Roasting for me is better, I drain the pan several times while it's cooking. The skin becomes crispy when roasting like a roast chicken, it does need to be basted. It is all dark meat and does have a gamey taste. Truthfully, I prefer Peking Duck because it's crispy, and does not have a gamey taste.

I have cooked lots of ducks wild and domestic. I would never put one in a pressure cooker. I would roast it in a roasting pan.

Lots of instructions on the internet. Find one flavored like you like. But I think it will just get tough and soggy in a pressure cooker.
