      <title>Banana Blueberry Muffins</title>

      <description>&lt;P&gt;Hello!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I felt like using up a ripe banana today but since it's just me and hubby I didn't want to make a whole cake or banana bread.&amp;nbsp; I had a recipe from my son's former sitter for banana muffins but felt like tweaking it (less sugar, less butter, added blueberries) and it turned out great - hubby approved!&amp;nbsp; Here it is:&lt;/P&gt;&lt;P&gt;&amp;nbsp; &amp;nbsp;&lt;/P&gt;&lt;P&gt;Yield:&amp;nbsp; 10 muffins&amp;nbsp; Oven 350 degrees - 25 minutes&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;No mixer needed&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Combine:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;3/4 cup sugar&lt;/P&gt;&lt;P&gt;1 egg&lt;/P&gt;&lt;P&gt;3/4 stick butter&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 mashed banana and add milk to make one cup.&lt;/P&gt;&lt;P&gt;2 T. applesauce&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Mix w/above:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 t. baking soda&lt;/P&gt;&lt;P&gt;1 and 1/2 cup flour (minus one tablespoon)&lt;/P&gt;&lt;P&gt;pinch of salt&lt;/P&gt;&lt;P&gt;1 t. vanilla&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Combine until mixed together well.&amp;nbsp; Put in cupcake tin with liners.&amp;nbsp; Topped with 5 blueberries each prior to placing in oven.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Bake 25 minutes or until toothpick comes clean.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I froze 5 of them so we wouldn't be tempted to overindulge!&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Hope you enjoy!&amp;nbsp; The batter is a little sweet but the blueberries offset it.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Michelle&lt;/P&gt;</description>

      <description>&lt;P&gt;These sound delicious. I love blueberries and the banana sounds wonderful.&lt;/P&gt;&lt;P&gt;I have been baking a lot and it goes into the freezer. Since my husband has been working from home he likes a little something with his morning coffee or tea in the morning. These will hit the spot for him.&lt;/P&gt;&lt;P&gt;I just found a cookbook and what I have made from it have been great.&lt;/P&gt;&lt;P&gt;Midwest Made is the name of the book.&lt;/P&gt;&lt;P&gt;Thank you for the recipe.&lt;/P&gt;</description>
